banana bread

When visiting my cousin in Toronto this summer, she had made the most amazing banana bread. This bread is incredibly moist and so tasty, I was delighted when she shared the recipe. It became an instant hit and is now a regular in our house. Thanks A!

Banana Bread
1/2 cup margarine, softened
1 cup sugar
2 eggs
1 tsp vanilla
1.5 cups flour
1 tsp baking soda
1/2 cup sour cream
2 bananas, mashed
1/2 cup chocolate chips

Cream margarine and sugar together.  Once combined, add eggs and vanilla.  Next, mix in the dry ingredients – flour and baking soda.  Add the mashed bananas, sour cream and chocolate chips.

Add the batter to a loaf pan and cover with foil.  Bake at 350 degrees for one hour.

stampede breakfast with pancakes and beans

It’s Stampede time in our beautiful city of Calgary, which means an abundance of pancakes, cowboy hats and country music.  For 10 days, people come together to celebrate “The Greatest Outdoor Show on Earth“.

This past weekend, we attended the Ismaili Muslim Community Stampede Breakfast.  Feeding nearly 5000, this is the 14th year of the annual breakfast.  This year, the community partnered with the United Way of Calgary, and the Ismaili float was decorated to highlight the importance of high school completion for overall lifetime success

It was so great to have friends and co-workers join us at this event.  Everyone enjoyed the pancakes, eggs and bharazi – an East African dish of pigeon peas in coconut curry.  Since so many requested the recipe, I called up my aunt who is on the catering committee and she shared the recipe which is below.  She is a genius at cooking and she was able to rattle the recipe off in seconds.

Bharazi (Pigeon Peas in Coconut Curry)

1 can of pigeon peas, drained
1 onion, chopped
1 tomato, chopped
1/4 tsp turmeric
1/4 tsp green chilis, blended
1/4 tsp garlic
1/4 tsp ginger
1/2 can of coconut milk
1/4 can of evaporated milk
cilantro
salt

Cook the onion in oil until softened.  Add the tomatoes, spices and milk and cook until mixture starts boiling.  Add peas and cook until curry thickens.  Finish the dish off with a generous amount of cilantro.

pick up some nan khatai at the calgary food blogger bake sale!

I’m so excited to be part of the Calgary Food Blogger Bake Sale taking place this weekend.  Vincci, from “Ceci n’est pas un food blog” has rounded up local food bloggers to raise funds for Calgary Meals on Wheels.  The bake sale is part of Market Collective’s 2nd Anniversary.  Come down and meet Calgary’s own food bloggers and have a taste of their delicious offerings.  Click here for more information and a list of the blogger participating.

It was hard trying to decide what to make for the bake sale.  I finally settled on Nan Khatai – Indian wheatlet cookies.  These are cookies from my childhood and is a treat that my 19 month old son now enjoys.   My dad makes these regularly and its the perfect offering for when friends drop in.  These crispy, crumbly cookies can be made like below or you can add some cardamom.  Delicious on their own, they are even better when dipped in warm milk or chai. 

Nan Khatai
(makes 60 medium sized cookies)

1 lb margarine or butter
1 1/2 cups sugar
2 eggs
1 tsp vanilla
1 1/2 cups wheatlets (sooji)
4 cups flour
2 tsp baking powder
food coloring

Cream the margarine/butter and sugar.  Once combined, add the eggs one at a time and then add the vanilla.  Combine 3 cups of flour and baking powder.  To the butter and sugar mix, gradually add in the flour and wheatlets, alternating between the two.  Knead the dough and slowly add in the last cup of flour until the dough pulls away and is soft enough to roll into balls. 

Bake at 350 degrees for 30 minutes or until golden brown.  While still warm, place a drop of food coloring in the center of each cookie.

pecan oatmeal cookies – another hit from the barefoot contessa

Its no secret that one of my favorite channels is the Food Network.  I can sit for hours watching chefs turn ordinary ingredients into mouth watering creations.  One of my faves is Ina Garten, the Barefoot Contessa.  I have recreated her recipes many times, and they are always a hit.  Her recent episode “Outdoor Entertaining” featured Raisin Pecan Oatmeal Cookies and they looked so good, I had to try them for myself.

I substituted the raisins for chocolate chips (gotta have the chocolate!) and found that these were the most delicious oatmeal cookies ever.  Another winning recipe from Ina!

Raisin Pecan Oatmeal Cookies
(Adapted from Ina Garten, Barefoot Contessa)

1 1/2 cups almonds
1/2 pound (2 sticks) unsalted butter, at room temperature
1 cup dark brown sugar, lightly packed
1 cup granulated sugar
2 extra-large eggs, at room temperature
2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon kosher salt
3 cups old-fashioned oatmeal
1 1/2 cups chocolate chips

Preheat the oven to 350 degrees F.

In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium-high speed until light and fluffy. With the mixer on low, add the eggs, one at a time, and the vanilla.

Sift the flour, baking powder, cinnamon, and salt together into a medium bowl. With the mixer on low, slowly add the dry ingredients to the butter mixture. Add the oats, raisins, and nuts and mix just until combined.

Using a small ice-cream scoop or a tablespoon, drop 2-inch mounds of dough onto sheet pans lined with parchment paper. Flatten slightly with a damp hand. Bake for 12 to 15 minutes, until lightly browned.

Transfer the cookies to a baking rack and cool completely.

coo coo for kuku paka

My husband loves indian food.  Its not one of my favorite things to cook but I do feel such a sense of accomplishment when I do and it turns out.  This past weekend, I made for the first time, kuku paka – chicken in a coconut curry sauce.  Chicken, tender potatoes and boiled eggs in a creamy yet mild curry – yum!

This was a hit with both husband and Q….definitely a make again meal.

Kuku Paka3 TB fried onion (or 1 small onion, sauteed)
3 pounds of chicken, cubed or in pieces
1 medium tomato, chopped
1/2 tsp each of garlic, ginger, cumin powder, coriander powder
1/4 tsp turmeric
4 potatoes, cubed
2 1/2 cups of water
2/3 pkg of pure creamed coconut mixed with 450 ml of water (you can use a can of coconut milk instead)
4 boiled eggs

Mix together the onions, chicken, tomatoes and spices and cook for a few minutes on medium heat.  Add the potatoes and water and cook on medium heat until chicken is done.  Add the coconut and continue cooking until the curry has reduced.  Add eggs.

Garnish with parsley or coriander.  Enjoy!
