This bright salad features Napa cabbage along with other veggies and herbs and is tossed in a hoisin vinaigrette.

When it comes to salads, I love it when the greens are chopped up just perfectly, not too big, for me to eat in a dignified manner. It’s the worst with large pieces of lettuce or cabbage just hanging off the fork, surely getting on my face with dressing trailing behind.

When it comes to salads, I love my crunchy toppers. Usually nuts. Any kind will do – peanuts, almonds, pecans, pine. Roasted and salted for flavour.

When it comes to salads, I like herbs that add flavour. Cilantro and mint, each bite just a little bit different.

When it comes to salads, I love a flavourful dressing. Simple ingredients, nothing too complicated. Oil, acid, garlic, seasoning, shaken together in a jar and poured, coating each component of the salad.

This Napa cabbage salad fits the bill on all the levels. The delicate greens are tossed with fresh peppers and green onions with herbs scattered throughout. The hoisin dressing with sesame oil accents the greens so perfectly and the roasted, salted peanuts just add the perfect crunch.
