When it comes to salads, I love it when the greens are chopped up just perfectly, not too big, for me to eat in a dignified manner. It’s the worst with large pieces of lettuce or cabbage just hanging off the fork, surely getting on my face with dressing trailing behind.

This Napa cabbage salad fits the bill on all the levels. The delicate greens are tossed with fresh peppers and green onions with herbs scattered throughout. The hoisin dressing with sesame oil accents the greens so perfectly and the roasted, salted peanuts just add the perfect crunch.
Ingredients
- 1 head napa cabbage, chopped
- 1 cup cilantro, chopped
- 1 cup peppers, chopped
- 3 green onions, chopped
- 1/4 cup mint, chopped
- 1/4 cup salted peanuts
- 2 TB hoisin sauce
- 3 TB red wine vinegar
- 1 TB sesame oil
- 1 TB minced garlic
- 1/4 cup olive oil
- salt
- pepper
Instructions
- Place all the vegetables in a large bowl.
- Combine dressing ingredients in a separate container.
- Add on as much dressing as you desire.
