We are trying our best to go meatless at least a couple of nights a week. This is a great dish where you don’t really feel like something is missing since it is packed with flavour. The bonus is that it is super fast to prepare. Just take the ingredients that you would put in a bruschetta and toss with pasta.
Measurements can vary for this, just add as much or as little as you want. I cooked together a couple of tomatoes, an onion, some cloves of garlic and sauteed it in a pan with some olive oil. I added a splash of balsamic vinegar, some basil and some salt and pepper. I added some cooked egg noodles and sprinkled it with parmesan. This took less than 15 minutes to prepare and was so flavourful and satisfying. Perfect for Meatless Monday.
