I’m constantly looking for ways to increase our fiber intake. Increasing the amount of veggies and beans and grains to our diet has helped. I’ve also tried prunes but that doesn’t go over so well with the little guys. But chocolate….add chocolate to anything and they will eat it up. They definitely take after their mamma. So when the kids were introduced to these chocolate fiber muffins, well, they were thrilled.
I used to make these muffins years ago and almost forgot about them. They were a hit back then and I’m happy to say they are kid approved now. There is three cups of bran cereal making these full of fiber. There’s also no butter or oil, so that’s a bonus, right?
These chocolate muffins also satisfy your sweet tooth. With not only cocoa but morsels of chocolate chips, this is a chocolate lovers dream. These little muffins are dense and very filling. They are perfect for tucking into the kids’ lunchbox or enjoying as a bedtime snack with a large glass of milk.
Ingredients
- 1/2 c unsweetened cocoa
- 3/4 c all purpose flour
- 1/4 tsp baking soda
- 1/4 tsp table salt
- 1 tbsp baking powder
- 1 1/4 c sugar
- 1 tsp vanilla
- 2 c water
- 3 c All Bran Cereal
- 2 egg whites
- 2/3 c chocolate chips
Instructions
- Put cereal in water and set aside.
- Mix all dry ingredients with a wire wisk.
- Combine cereal, dry mixture, egg whites and vanilla and mix well in a mixer.
- Fold in choc.chips.
- Put batter in 24 reg size muffin cups with liners.
- Bake at 350 for 18-20 minutes.
