Medjool Date & Pistachio Goat Cheese Log

Be ready for the holidays with this Medjool date and pistachio goat cheese log. Sweet Medjools, roasted pistachios and herbs coat creamy, tangy goat cheese – quick and easy!

With holiday season on the horizon, having some appetizer recipes that can be made quick and simply is a must.  Dried fruit, nuts and cheese are key ingredients to have on hand to make something festive and tasty. This Medjool date and pistachio goat cheese log is perfect with crackers or crostini. It also makes a great addition to any charcuterie or cheese board.

The coating for this goat cheese log not only include dates and pistachios but also parsley and thyme. The fruit, nuts and herbs can be blitzed together easily in a food processor and the mixture itself is fragrant and delicious.

Once blitzed, you just lay the mixture on some parchment before putting down the goat cheese. Use the parchment paper to help roll the goat cheese so that it is fully covered in the flavourful mixture.

You could serve the log as is but, if you prefer the log to be sliced, freeze the coated cheese for 20 to 30 minutes. The slicing is a lot easier that way. For those that love giving edible gifts, this cheese log is perfect for gifting! Just wrap it in something festive.

Ingredients

  • 150g goat cheese log
  • ½ cup Medjool dates, chopped
  • ½ cup pistachios, roasted
  • 2 TB parsley
  • 2 – 3 sprigs of thyme

Instructions

  1. In a food processor, combine the Medjool dates, nuts and herbs until chopped.
  2. On a piece of parchment, spread out the ground mixture.
  3. Place the goat cheese on the edge of the mixture and the use parchment to roll the cheese so that it is fully covered all around.
  4. Freeze the log for 20-30 minutes for easy slicing.
