One of hubby’s favourite things to eat is beef curry. It’s his version of comfort food. After a weekend away and a crazy week ahead at work, this was his request.
This recipe is made in the Instant Pot and is easy peasy. Using the Saute function and the Pressure function, the resulting dish is full of flavour and tender beef.
To make the curry, I headed to the butcher shop and got two pounds of beef. I asked for it with bones because the bones add so much flavour. There weren’t a lot of bones, just enough.
This recipe is the quick version. I used crushed tomatoes and fried onions which saves a lot of time, not just in the chopping, but the cooking too. If you have the time, you can saute the onions in oil before adding the tomato mixture and beef. I always keep a bag of fried onions in the freezer and crushed tomatoes in the pantry. It means that there’s no excuse to not whip up Indian food at a moment’s notice.
While the curry was cooking, I made some rice in the rice cooker, so there was a pot of rice ready and waiting to soak up that fragrant curry. I also made some naan which was perfect in sopping up the flavourful sauce.

- 2 pounds beef, cubed
- 6 TB crushed tomatoes
- 3 tsp tomato paste
- 5 TB fried onions
- 1 1/2 tsp crushed garlic
- 1 1/2 tsp crushed ginger
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- salt
- 2 cups water
- cilantro
Instructions
- In a bowl, combine the tomatoes, tomato paste, onions and spices.
- Turn the Instant Pot on the Saute mode and add some oil.
- When the oil is glistening, add the tomato mixture and cook until it separates from the oil.
- Add the beef and mix the beef with the tomato and spices.
- Set the Instant Pot onto Manual Pressure for 15 minutes.
- Let the pressure release naturally for 10 minutes and then turn the valve to Venting.
- Put the Instant Pot on Saute mode for 10 minutes.
- Garnish with cilantro and serve with rice.
