It’s amazing how hot this summer has been. Besides drinking tons of water, what I crave is something icy, refreshing, and citrusy. This Lychee Mule Mocktail is the perfect drink!
Moscow Mules are great – the bubbles with lime, mint and the spice from the ginger – it just tastes so good. I thought I would change it up a bit by adding some lychee juice. I love lychees – both the fruit and the juice. It made for an interesting twist and it worked so well with the other ingredients. A little tropical and sweet.
I have to admit, I did not love ginger beer right away. The spicy drink which burned at the back of my throat is one that took some getting used to. The addition of lime and mint though makes it something I crave.
It’s always hard to find a good mocktail. I do like to create them to ensure that everyone has something fun to drink. Fear not though, if you’re wanting a cocktail, just add 1 or 2 oz of vodka to this drink.
Mules are usually served in copper mugs (affiliate link). The copper keeps the drinks nice and cold. They also seem to make carbonated beverages feel more fizzy.
The ingredients are listed for a single drink but you can easily double, triples, quadruple…to serve a crowd. Cheers!
Ingredients
- 3 oz lychee juice
- 1 oz lime juice
- 1 oz lemon-lime soda
- 1 TB simple syrup
- 1/2 cup ginger beer
- mint
Instructions
- Fill a copper mug with ice.
- Add in all the ingredients and stir.
- Garnish with lime and mint.
