Condensed Milk Cake

Celebrate World Baking Day with this Condensed Milk Bundt Cake enriched with eggs.

World Baking Day is on May 18th and what better way to celebrate one of our favourite pastimes than with some baking. The smell of baking just brings so much comfort and warmth and the possibilities of what you can create in the kitchen are endless. From bread to cookies to loaves and bars, I love watching these baking come together with simple ingredients – eggs, flour, sugar and butter. Whether making something for a purpose or just playing in the kitchen, baking is a big part of our lives.

One ingredient that is most common in most of what I bake are eggs. In our house, we go through A LOT of eggs. They are nutrient-dense and full of protein and vitamins so they make for a very healthy meal. We make them for breakfast, lunch and dinner and are left feeling full and satisfied.

The Incredible Egg

Eggs provide 14 important nutrients such as vitamins A, D, E, folate, iron, zinc and choline. Each egg provides 6g of protein and they are great for your bones, teeth, skin and eyes. Fun fact – white eggs are produced by white chickens and brown eggs by brown chickens but both have the same nutritional value.

For baking, eggs are important in bringing ingredients together. They provide structure and stability in cakes, like in this Condensed Milk Bundt Cake. The beauty of this cake is that the ingredients are minimal. You don’t need a mixer, you can beat all the ingredients by hand, starting with four eggs in a bowl.

The Cake

For the sweetener, you use a whole can of condensed milk. I love condensed milk and could sit there and eat it by the spoonful, like pudding. For me, it’s a dangerous ingredient to use! Vanilla is a staple in most of my baking and while I put an amount of how much you need, it’s definitely something that can be measured with the heart.

The cake only requires 1/3 cup of butter which needs to be melted. Once the butter is melted, you just let it cool so that the eggs don’t cook when you add them together.

Flour and baking powder are next, giving the cake structure and rise.

This cake is a little dense so it’s perfect served with custard or cream and topped with berries. Those are definitely not necessary though, as I saw it being enjoyed as is every time I made the cake. How are you celebrating World Baking Day?

Ingredients

  • 1/3 cup butter, melted
  • 4 eggs
  • 1 300ml can condensed milk
  • 1 tsp vanilla
  • 1 ¼ cup flour
  • 1 tsp baking powder

Instructions

  1. In a large bowl, beat the eggs.
  2. Add the butter, condensed milk and vanilla and mix well.
  3. Add the flour and baking powder and combine until it is all mixed together.
  4. Pour the batter into a greased bundt pan and bake at 350 degrees for 40 minutes or until a toothpick comes out clean.
  5. Let cool for a little bit and then sift icing sugar over the cake.
