Just over an hour away, is a sanctuary for any tired mamma. Located in the Banff Springs Hotel, the Willow Stream Spa is the perfect place for some R and R. Hubby and I took advantage of a kid free weekend and enjoyed some time at the spa.

With most spa services, hotel spa access is complimentary. Spa access allows you to take advantage of the 3 waterfall treatment whirlpools as well as the mineral pool and the outdoor whirlpool. Even if you don’t get a treatment, you can relax the day away in the sauna, steam room and inhalation room.

There’s even a co-ed resting lounge where you can hydrate with flavoured water and enjoy some snacks like cookies and granola bars. The granola bars are my fave and the attendant happily brought me some when I noticed they were not out. They are the best! You can even order some lunch, relaxing in your robe.

It was such a great day and a much needed break. I can’t wait until my next escape!

canada beef culinary series in mexico

While in Mexico staying at the Generations Resort by Karisma, we were able to enjoy the Canada Beef Culinary Series. For the past year, each month had a whole week dedicated to Canadian Beef. The program highlighted a different chef from Canada coming up with some great beef creations. The dishes were then paired with a wine by an expert from Jackson Family Wines. This was such a successful collaboration that the Culinary Series is back for 2015!

While we were there in December, we were treated to food by Chef Roger Sleiman from Kelowna. while wine pairings were done by Ben Fine from Jackson Family Wine.

I enjoyed the cooking class one night while hubby and I both attended the gala dinner.  Take a look at some of the delicious dishes that we enjoyed!

generations by karisma, part 1

It’s been almost a month since we spent a glorious week in Mexico, staying at the Generations Resort by Karisma in the Mayan Riviera. We actually won our stay there, winning at the Great Canadian Beef Cookout. It was such a wonderful trip that I couldn’t wait to share all the details. Everything was five star from the resort, the food (oh the food!), the activities for the kids and of course, enjoying the Canadian Beef Culinary Series. Enjoying Canadian beef in Mexico was certainly a treat!

Today’s post will set the scene. Be sure to stay tuned on Tuesdays in January for more on our trip and lots of food porn!

We were picked up from the airport and taken to the resort in a luxury SUV. The weather was hot so it was nice to be in an air conditioned vehicle on the half hour drive to the resort. We were met at the door with drinks and smiling faces. After checking in, we were introduced to our butler who took us to our room and showed us around. Our butlers were amazing! Ivan and Luiz took great care of us, ensuring that we had everything we needed. They were the best!

Our room was huge! There was lots of space and included a living room, a kitchen, a huge dining table, 2 bathrooms, a private outdoor shower and a very spacious bedroom. Although we were on the third floor, we also had an infinity pool right outside our balcony. From the second we got there, we didn’t want to leave.

Travelling with a baby can be hard with all the stuff that you need to take with you. The hotel took care of us in that department too! They had everything ready for us – a crib, a stoller, a playpen, a bottle sterilizer, a bottle warmer, a change table and even baby food.

The hotel boasts a Gourmet Inclusive Experience, meaning the restaurants and the food that they serve are amazing and definitely above par. More on that next week!

There are many pools on the grounds as well as a swim up bar. We spent a lot of time in the cabanas on the beach. Q was able to play in the sand or the ocean while Z napped. The beach butlers Ivan and Enrique ensured our cabana was ready for us to enjoy. They even had a cart that had sunscreen, newspapers, books and sand toys – you really didn’t have to bring a single thing!

I had a chance to check out the greenhouse that was located at the El Dorado Royale next door. It’s the first resort greenhouse in the region and was quite impressive at 100,000 square feet. The facility produces eight to ten tonnes of herbs, fruits and vegetables per month and distributes it to all the Karisma resorts in the region.

The Entertainment Team at the resort were amazing! The team of four – Alex, Oscar, Penelope and Carolina – were always there ready to have a good time. They quickly learned our names and spent lots of time with the kids, giving them loads of attention. Q got attached to all of them and still misses them.

There was entertainment every night. From acrobats to dancers to magicians, the performers always put on quite a show.

There was a lot for the kids to do, which I loved! The Eko Kids Club was a fun place for Q to go during the day and hang out with other kids. There was a ball pit, video games and lots of arts and crafts. Part of the club was Little Eko Chefs. The kids got to wear chef hats and aprons and were able to make something different every day. Q had fun making gazpacho, tortillas and even sushi. It was so great that they had this!

It was a great resort with amazing service. There is no question that we will go back!

The holidays are done and we are back to our busy routine. School, work, extra curricular activities – it is definitely back to the grind.

We were lucky to escape in December, and oh what an escape it was! We enjoyed a week at the Generations Resort by Karisma in the Mayan Riviera while enjoying the Canadian Beef Culinary Series at the El Dorado Hotel next door. It was a wonderful week and Q keeps asking when we get to go back. If you were following along on Instagram, you know how spoiled we were while enjoying the Mexican sun. edgewater grill (san diego)

We were happy to find a few places open on Christmas Day in San Diego.  To find breakfast, we walked along the marina and came upon Edgewater Grill.  The menu outside tempted us in with smoked salmon bennies and crab omelets.  When eating by the water, seafood just makes sense.

For maximum satisfaction, hubby and I ordered both and shared. The smoked salmon benedict had a good sized piece of salmon on an english muffin, topped with a perfectly poached egg, hollandaise sauce and capers.  The salmon was perfect and I enjoyed the large chunks with my runny egg. The only disppointment was the hollandaise sauce which was too vinegary. 

The crab and asparagus omelet was the real winner. The omelet enveloped fresh blue crab with stalks of asparagus and melted jack cheese. It was comfort and decadence all in one bite.

It was a good place to fill our bellies while enjoying the beautiful view.

We spent three days running around San Diego trying to see all the sights and keep our little guy entertained. We went to Legoland, Sea World, the Safari Park, saw a museum and did a harbour tour.  It was fun but exhausting. I’m glad we had the foresight to book a chill day before heading back home.  We moved to a hotel by the marina and enjoyed the water, leisurely walking on the boardwalk and eating good food.

For Christmas eve, we checked out a local thai restaurant, Rama Thai. It was a busy place and we were lucky to get in. We sat on the covered sidewalk which gave us a chance to enjoy the nice weather, knowing that people back home were facing temperatures in the minus twenties.

Not wanting to eat too much, we ordered one appetizer and one main, which actually was more than enough for the three of us. At Q’s request, we started with the calamari. The fresh calamari was breaded in panko and served with a sweet dipping sauce.  The coating was crispy and the calamari was cooked to perfection.

For our main, we had one of our favourites, Panang Curry.  We had ours with chicken and shrimp and ladled it over steamed rice. The aromatic curry had chunks of chicken, good sized shrimp and loads of vegetables, including crinkle cut carrots.  The spicy broth had a hint of sweetness and it was delicious.

We ended our meal with a scoop of pineappe and coconut ice cream. It was a great combination and cooled our tongues.

As we were leaving the restaurant, I noticed a couple at another table enjoying some prawns wrapped in noodles and deep fried. I will definitely have to try that the next time.

Mention Mario to most kids, the Mario brothers immediately come to mind. Mention Mario to my 4 year old, and he talks about the chef that he sees on tv. I love this kid!

While spending some time at the Venetian on our recent trip to Vegas, we saw one of Mario Batali’s restaurants, Otto, and thought it was the perfect place to grab a bite after our indoor gondola ride.  We took a seat “outdoors” and enjoyed the painted sky ceiling while enjoying the entertainment in St. Mark’s Square.

While we were checking out the menu, Q asked one of the waiters, “Where’s Mario?”. We discovered we had missed him by a week!  Bread and breadsticks were brought to the table and they happily obliged when we asked for some oil and vinegar.

As a starter, we tried the Ricotta Fritters.  These were morsels of fried goodness!  Ricotta cheese and red pepper balls rolled in bread crumbs and fried.  The cheese oozed out as we took a bite. Definitely a huge hit with all of us.

We also ordered a couple of entrees – the Grilled Tuna and the Maccherona. Both dishes were great and super tasty.
The tuna was cooked to perfection and served with a sicilian pesto.  I really loved this version of pesto and couldn’t get enough of it.  Red in colour, it was made with tomatoes, almonds and garlic. So good!
The pasta dish was great as well. With roasted peppers and chilis, it was cooked perfectly.

The dessert menu looked great but sadly we were so stuffed, there was just no room.  Definitely a great meal!

serendipity 3 (las vegas)

After Q and I spent a week in Texas, we met hubby in Vegas for a few days.  It was fun for Q to see the lights and he was pretty great when it came time to outlet shopping.  When driving the Strip, I noticed Serendipity 3 outside the Caesar’s Hotel.  I had always wanted to go to the original in NYC, but knowing I wasn’t going there anytime soon, I had to go while in Vegas.

Made famous in the movie Serendipity, and then even more so by Oprah, I knew I had to try the Frrrozen Hot Chocolate. The place was packed and we had a bit of a wait but it was worth it.

We ordered the drink for two and it was huge!  The three of us shared but we could have easily shared with three more.  It was a chocolatey blend of icy goodness topped with whipping cream.   So good!  As we sipped the yummy concoction, we got chunks of chocolate shavings while we sipped.

Would I go back for more? Most definitely!

During our recent trip to Dallas, we squeezed in a quick one day visit to Houston to visit family.  It had been years since I had seen my cousins and I had never met their kids.  With them being so close in age to Q, I really wanted to get them together and meet.  It didn’t take long for them to form a bond, and in no time, they were playing with trains and drawing on their ipads.

We went out for dinner later in the evening to their favourite thai restaurants, Tony Thai.  We got there just before they were going to close but they welcomed us in for a quick bite.

We started with soup, Tom Yum.  The spicy broth with all kinds of seafood was delicious.  We also had some Thai wings as a starter which were the most delicious wings I had tasted.  The breaded wings had a sweet and spicy sauce that we just couldn’t get enough of.  They were a huge hit and we had to order another round.

The fried rice was tasty with chunks of chicken and loaded with veggies.  This went perfectly with the chicken in red curry, a spicy sauce fragranced with coconut milk.  The greens were delicious as well, with lemongrass and garlic – a tasty way to eat your veggies.

We ended the meal off with a delicious creme brulee.  Although there for just a day, it was wonderful to spend time with family.

a week in paradise

We just spent a week in paradise.  As temperatures fell in Calgary and we finally started experiencing winter, we flew to Cancun and enjoyed the sun, sand and heat in the Mayan.

We traveled with some close friends who had 2 kids – a 3 year old like Q, and a 1 year old.  Q and J kept each other company – they are the best of friends. They have a total love/hate relationship and as much as they fight and compete, they are lost without each other. After having a shouting match in Tulum in front of a group of tourists, over who was more mad at the other, one lady remarked how they were like a married couple.

As with most all-inclusives, you pray that the resort you’re staying at has good food.  Really, if the food is good, who cares about anything else.  The Moon Palace had the best food, and lots of variety.

Even with the variety, I was drawn to the simplicity of the fried tortilla chips, fresh Mexican sauce and creamy guacamole.  I had this at every meal!  The Mexican sauce was pico de gaillo with tomatoes, onions, cilantro and lime.  I think I got my daily dose of veggies just from this.

The chefs at Moon Palace were kind enough to share a couple of dessert recipes with me.  I am excited to share these in upcoming posts.
