With Ramadan on the horizon, those observing the fast are sure to be stocking up on Medjool dates. A staple for breaking the fast, it’s definitely an important part of the Ramadan fast.
Natural Delights Medjool Dates are fresh dates found year-round in the produce section of your favourite grocery store. They are very high in antioxidants, fibre, potassium and micro nutrients. Medjools are naturally sweet and contain no sulphites or preservatives. They are perfect for snacking on and are great to bake with.
Medjools are key in making this tasty log. Cooking them in cream creates a creamy texture, almost fudge-like. The dates and the almonds create delicious slices that are a great alternative to breaking the fast.
Ingredients
You only need three ingredients to make this log – Natural Delights Medjool Dates, almonds and cream. And some patience while the mixture cools. That’s it. Since the nuts aren’t actually being cooked, I like to use roasted almonds in the filling, but natural almonds work too. I love using crushed almonds to coat the log – I definitely think the more nuts the better. This can easily be replaced with shredded coconut or sesame seeds.
Method
In a saucepan, add some cream and chopped up dates. Let this cook on medium heat until the dates absorb the cream and it becomes fudge-like in texture. That’s when you add the chopped up almonds and take it off the heat. When the mixture cools down a little, and it’s easy to handle, you form it into a log and roll it into the crushed nuts.
Ingredients
- ½ pound Natural Delights Medjool Dates (approximately 10 dates)
- ½ cup heavy cream
- 1 cup roasted almonds, chopped
- ½ cup crushed almonds
Instructions
- In a saucepan, add some cream and chopped up dates.
- Let this cook on medium heat until the dates absorb the cream and it becomes fudge-like in texture.
- Add the chopped up almonds and take it off the heat.
- When the mixture cools down a little, and it’s easy to handle, form the mixture into a log.
- Add the crushed nuts onto parchment paper and roll the log into the nuts.
- Wrap the log with the parchment and place it into a zippered bag and place in the freezer for a few hours before you slice it into disks.
