One of my favourite drinks is lemonade. Tart and sweet and so refreshing. Especially on those hot summer days. My new favourite is this vibrant sparkling purple lemonade.
There are a few key things that I prefer with lemonade. I do love everything bubbly so using either sparkling water or sparkling soda is important. I also like a lot of lemon. I don’t want to guess if I’m drinking something lemony or not.
I thought I would take lemonade to another level by making it purple, my favourite colour. The key to this is making some pea flower simple syrup.

Dried pea flowers or powder can easily be found online. Just combine 1 cup of sugar with 1 cup of water and 1 TB of dried flowers and bring it to a boil. The colour will turn a brilliant blue. Keep this syrup handy in the fridge and use a few tablespoons when you want to make yourself a glass of lemonade.

The purple comes from the combining of the blue syrup and the acidic lemon. This is fun thing to get your kids in on. Like magic!
Make yourself a glass of lemonade by adding ice to a glass, 1-4 tablespoons of the simple syrup (depending on how sweet you like it) and filling it with either still or sparkling water. I add the juice of half a medium lemon to each glass of lemonade, but again, add as much tartness as you prefer.
