The weather is finally cooperating. We have been taking advantage of every opportunity to get together with friends and family and enjoy the sunshine. Potlucks are huge this time of year and this is the perfect dish to bring to your next one.
I have been loving this greek pasta salad and have been having it as often as I can. On the days I don’t feel like making or eating pasta, I leave it out. I love the fresh tomatoes and the sharp onions with the creamy dressing. Of course, lots of feta just makes the whole dish perfection.
This dish made our favourites list because not only can I get enough of it, the kids can’t either. The cheese and the creamy dressing are definite winners and can make any veggie taste even better.
I’m not a big fan of olives but I could see this being a great addition to the greek flavours. This is great as a side but add in some grilled chicken and you have got yourself a great main.

Ingredients
- 500g pasta, cooked
- 1/2 cucumber, chopped
- 1/2 red onion, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tsp dijon mustard
- 1 TB lemon juice
- 1/2 tsp sugar
- 1 tsp greek seasoning
- salt
- pepper
Instructions
- Cook your pasta according to the package.
- Combine the pasta, cucumber, red onions, tomatoes and feta.
- Combine the oil, vinegar, mustard, lemon juice, sugar and seasonings.
- Pour as much dressing as you require to coat the pasta mixture.
