The Instant Pot is still one of the most used appliances around here. I love that things can be made in just one pot and usually, things are made so quickly.
September means things are busy. With the kids back in school today and the calendar quickly being filled with activities, we need easy to make dishes that can be eaten for both lunch and dinner. These Instant Pot Meatloaf Muffins fit the bill. Meatloaf muffins, meatloaf muffins, meatloaf muffins – say that ten times fast.
These mini meatloaves are made quickly and easily and are a perfect way to get the kids into the kitchen. They can easily measure out the spices and even get in on mixing the meat together.
Using a silicone muffin tray, you can make the perfect individual portions and make them quick and easy in the Instant Pot. The little loaves are the perfect size for the lunch box, served with a side of veggies. For dinner, we had the meatloaves with salad and mashed potatoes. They were a hit!
Ingredients
- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- salt
- pepper
- 1/2 cup passata
- 1 TB tomato paste
- 1/2 TB brown sugar
- 1 tsp red wine vinegar
- 1 tsp Italian seasoning
- salt
- pepper
Instructions
- In a bowl, combine the bread crumbs with the milk until there no lumps.
- Add in the beef, garlic powder, onion powder, Italian seasoning and salt and pepper.
- Divide the meat into 7 or 8 depending on the number of cavities in your mold.
- In another bowl, combine the passata, tomato paste, brown sugar, red wine vinegar, seasoning, salt and pepper.
- Brush the sauce mixture on top of all the meat muffins.
- Place a trivet at the bottom of the Instant Pot and place 1 cup of water at the bottom.
- Place the muffin mold on top of the trivet.
- Cook on high pressure for 35 minutes and do a quick release once the time is up.
