Pack Your Lunchbox with Protein-Powered Sausage & French Toast Roll-Ups

Hard to believe that another summer has quickly flown by. It’s almost time for the kids to go back to school. While I will enjoy the routine, I will definitely miss the carefree spirit that we get to enjoy for a couple of months.
With back to school, it’s time to think about lunches. It is hard coming up with lunches that the kids will eat, that are nutritious, that include protein, that include something that will give the kids energy, that aren’t messy, that….the list goes on and on.
I think it’s important to get the kids involved because no one wants to see those lunch boxes come back as full as you sent them in the morning. It definitely makes a difference when the kids help with preparing a list of things they will actually eat or if they come to the grocery store to help pick things out.

Eggs!
Ensuring that the kids eat something healthy and full of nutrients is key and so I’m always looking for ways to incorporate eggs. Eggs are considered to be a complete protein since they contain nine essential amino acids. These are nature’s building blocks because they help build protein which gives energy to help the little minds in school. Eggs also contain many vitamins and minerals like iron, vitamin A, D, E and B12. Also included is folate, selenium, choline, lutein and zeaxanthin.
Did you know a large egg contains 6g of high-quality, complete protein and is only 70 calories? They are low in fat, gluten-free and perfect for many dietary needs.
I love that my nephew is willing to take hard boiled eggs for lunch. Unfortunately that’s not the case for my boys. Thinking about some of their favourite egg dishes, French toast always comes to mind. I decided to use this as inspiration for these sausage French toast roll ups. These were super easy to make and a hit in this house.

What’s For Lunch?
These roll ups are a fun twist on a classic breakfast! They are also protein packed, something everyone seems to be looking for these days. Sausages enrobed in bread and then put in an egg and cream mixture – like French toast, but savoury. These work really well for lunch or breakfast on the go since they are handheld and not messy at all.

The ingredients for this dish are super simple – eggs, bread, breakfast sausages, milk or cream and salt and pepper.
There are a few different breakfast sausages you can use, just use your favourite. Sometimes I will use the maple beef sausages but I also like to use an Italian chicken sausage. These can be cooked on the stove or on the bbq but I like to just toss them in the air fryer until they are cooked.

Next comes the bread. This is another area where you can choose your favourite, whether it be white, brown, multigrain, sourdough. Definitely customize the ingredients that work for your family.

Method
To make the roll ups, you first combine the eggs with milk or cream and season with salt and pepper. Set this aside while you prepare the rolls. It really is that simple!



Next, prepare the bread. All you have to do is cut off the crusts.

Once the sausages are cooked, check and make sure that they will fit in the bread that you are using. If the bread is too short to completely wrap around the meat, just use a rolling pin to squish and spread the bread. Place the sausage on the edge and roll until you have a nice little cigar roll.

Take each roll and dip it into the egg mixture. This doesn’t need to sit for long in the egg mixture, just long enough for the bread to soak it all up.

Fry these up on medium high heat until golden brown on all sides.

These roll ups can be prepped in advance and are great hot for breakfast or at room temperature in a boxed lunch. They are portable and an easy handheld lunch.

The combination of the eggs and sausages will keep the kids full and energized and satisfied throughout the day.

Ingredients
- 2 large eggs
- ¼ cup milk or cream
- 5 slices of bread
- 5 breakfast sausages, cooked
- salt
- pepper
Instructions
- In a bowl, beat the eggs. Add the cream and salt and pepper and set aside.
- Cut the crusts off the bread.
- Place the sausage on the edge of the slice of bread and roll up tightly. If the bread does not cover the length of the sausage, use a rolling pin to flatten the bread and make it fit.
- Dip each roll into the egg mixture and cook over medium heat until golden on all sides.
