shrimp cakes

Shrimp is a staple in our home.  It thaws easily and cooks quickly, it’s the perfect thing to pull out and make a quick meal with.  We had family bringing dinner over (lucky us!) but I still wanted to make an appetizer.  My fridge was stocked with peppers and onions and I thought this would be the perfect quick snack to make.  Hubby loved them and even raved about them to our massage therapist – always a good sign.  Can be served with roasted red pepper dip or garlic aioli.

Shrimp Cakes
Makes 12
1 pound raw shrimp, peeled and deveined
3 green onions, chopped
1 red pepper, chopped
1 egg
1 TB dijon mustard
salt
pepper
breadcrumbs

In a food processor, coarsely chop the raw shrimp.  Transfer to a bowl and add the veggies, egg, mustard, salt and pepper.  Add breadcrumbs, a little at a time, until the mixture can be formed into patties.  Refrigerate the patties for about 5 to 10 minutes.  Pan fry the shrimp cakes until shrimp is cooked and each cake has a nice brown crust.

garlic lemon shrimp orzo

As much as I love cooking, sometimes after a long day at work, the last thing I want is to spend time in the kitchen.  With a 20 month old though, its not always easy to grab some takeout that has the nutrition that is important in his diet.  This is one of my favorite dishes and it’s a quick and easy dish to prepare.  The starch from the orzo makes the dish creamy, like a faux risotto.  Q can be moody about food, and things he likes one day can be something he doesn’t touch the next.  This orzo is tasty and comforting and a dish that he never says no to.  This dish is inspired by Ina Garten’s Baked Shrimp Scampi.

Garlic Lemon Shrimp Orzo

1 pound of peeled, deveined shrimp
2 cloves garlic, minced
4 green onions, chopped
2 tomatoes, chopped
grated lemon zest
juice of 1/2 lemon
4 TB butter
2/3 cup panko
1/2 cup orzo, cooked
salt
pepper

Cook the shrimp in oil until almost cooked through. Add the garlic, onions, tomatoes, and lemon zest and stir.  Add in the lemon juice, butter and panko and stir until mixture becomes thick.  Add orzo and stir until combined.

easy shrimp salad rolls

Anyone who knows me knows how much I like Vietnamese food. At least once a week, I venture out to a great Vietnamese shop a couple of blocks from work. Sate beef with vermicelli and spring rolls makes for a very satisfying meal. One of my favorite things to eat at home are the Shrimp Salad Rolls. It is the easiest thing to make and, you can have the perfect appetizer or snack in minutes.

Shrimp Salad RollsCooked shrimp, approximately 3 per rolls
Rice wrappers
Cooked vermicelli
Mint
Lettuce or Spinach

Place the rice wrapper in a bowl of warm water until soft and transparent. Line up 3 shrimp in the middle followed by a mint leaf, greens and vermicelli. Fold in the two ends and roll.

Serve with hoisin sauce and Sriracha chili sauce.
