Hope all the moms out there had a great Mother’s Day. I got spoiled by my boys with cards and bath bombs and even made it to the movies!

We had our moms over for lunch on Sunday, celebrating how awesome they are. We had spinach salad, dhokra, barbecued chicken and oven-fried cassava. There was also plenty for dessert – fruit, a bundt and knafi.

I tried Knafi at my aunt’s house a couple years ago and loved it! Shredded phyllo enveloping a sweet ricotta mixture – it was so good, I couldn’t stop thinking about it. I finally got the recipe for this Lebanese treat last week and thought it was perfect to try out for Mother’s Day. I was surprised at how easy this dessert was. In fact, Q did all the work. The crunchy phyllo, the warm cheese – it was heaven!

Knafi 

2 lbs. ricotta cheese
1 cup sugar
1 lb shredded phyllo
3/4 cup melted butter

Syrup:
2 cups sugar
1 cup water
1 TB lemon juice

Preheat oven to 325 degrees. Combine the ricotta with the sugar. Place the shredded phyllo in a large bowl and pour the melted butter on top. Mix until the pastry is coated with the butter.

Spread half the pastry on the bottom of a 9 x 13″ pan. Spread the ricotta mixture on top of the phyllo. Cover the cheese layer with the remaining phyllo.

Bake for 1 hour until golden brown. In the meantime, make the syrup (see below). Remove from the oven and pour cold syrup over top. Serve warm.

Syrup: Combine the sugar and water and stir until dissolved. Boil over medium heat for 5 minutes. Add lemon juice and boil for 5 more minutes. Remove from heat and cool.

easter cupcakes

Here’s a fun way to decorate cupcakes for Easter using everyone’s favourite Easter candy – Mini Eggs and Peeps!

Make your favourite cupcake recipe. Cut a little piece off the top and stuff the cupcake with as many mini eggs as you want. Place the cut piece back in. Ice the cupcake and top with a marshmallow peep.

Kids of all ages will be thrilled with the surprise in the centre.

celebrating with cake – food mamma is six!

I love March. It’s the start of Spring, my birthday month as well as the anniversary of my blog.

I am excited to be celebrating six years of Food Mamma!  Q was only one when I started the blog. Things sure have changed. Z is turning two next month and I am so lucky to have both my boys happy to help in the kitchen. It’s always fun to create fun and tasty treats with my loves and be able to document it through my blog. I am also grateful for the friends and connections I have made.

q the foodie

We celebrated Q’s birthday on Friday. Hard to believe that my little guy is already 7 years old. Seems like just yesterday that he was born! He’s turned into quite the little man. He is warm and loving and the best big brother, taking great care of Z. He has developed quite the palate and is a huge fan of sushi. To celebrate, we went to his favourite place, Kinjo!

Since the summer, Q has been wanting to create his own food blog. Q the Foodie was launched on Friday and I hope that you will check it out. Q is hoping to document his food adventures.

One of our favourite places to eat is Earls Kitchen + Bar. I’ve been going to Earls for years – the service is great and the food is always good!

Hubby sticks to his usual Cajun Chicken with a side of Fettucine. I change it up every time but always make room for the fries with a side of their delicious parm dip.

One of our favourite burger places in Calgary is Smashburger. I was introduced to the US chain when it opened in Calgary three years ago.  We love their burgers and their sides, especially their sweet potato fries and fried pickles!

One of Q’s favourite places to eat is Edo Japan. He loves the Sukiyaki Beef (extra sauce if he’s sharing with mamma!), a side of sushi if he’s extra hungry and of course, it has to be topped off with a cinnamon apple spring roll.

Edo Japan is feel good food. It’s healthy, satisfying and so delicious that Q even finishes off the veggies.
