roasted pumpkin seeds

We love Halloween around here! It’s a fun time of the month and it’s a day we all look forward to. We spent some time on the weekend carving our pumpkin. Q was reluctant to get his hands dirty but once we started pulling out the pumpkin guts, he had fun. The best part of pumpkin carving is of course the seeds! Roasted and salted, they are perfect for munching on.

There are so many variations on how people roast the seeds. This is how we do them at our house.

Once you pull out the seeds from the pumpkin, rinse them so that you get all the pumpkin off. I usually do this in a colander.

Once washed, place the seeds between paper towels, getting them as dry as you can.

Put the seeds on a baking sheet and drizzle with olive oil. Bake at 350 degrees F for about 20 to 30 minutes. Take them seeds out when they get a little toasty and brown. Salt and enjoy!

vij’s lamb with fenugreek sauce

Today we celebrated Eid Al Adha, also known as the Festival of Sacrifice. It seemed appropriate to have lamb and a great excuse to try out a recipe I had been eying.

Most people who know of Vikram Vij know that the dish he seems to be most associated with is his lamb popsicles in a fenugreek cream curry. I had been meaning to make it for a while and luckily remembered this recipe the last time I was at the grocery store. I was unable to find a whole rack of lamb but was lucky to find some individual chops.

The recipe seemed easy and even with a couple of sides, dinner came together really quickly. The highlight of the meal was the vibrant yellow fenugreek sauce. It paired perfectly with the lamb chops and even worked with the mashed potatoes and green beans. 

It was a really tasty meal and definitely a special one to celebrate Eid. I’m also very happy to have a jar left of the creamy sauce.

Vikram Vij’s Lamb Popsicles in Fenugreek Cream Curry
From FoodNetwork.ca

Lamb:
¼ cup sweet white wine
¾ cup grainy yellow mustard
1 tsp salt
1 tsp ground black pepper
4 lb. French-cut racks of lamb, in chops

Curry Sauce:
4 cup whipping cream
1 Tbsp salt
1 tsp paprika
½ tsp ground cayenne pepper
1 Tbsp dried green fenugreek leaves
¼ cup lemon juice
¼ cup canola oil
3 Tbsp garlic, finely chopped
1 tsp turmeric

Lamb
Combine wine, mustard, salt and pepper in a large bowl. Add lamb and coat well with the marinade. Cover the bowl with plastic wrap and refrigerate for 2 to 4 hours.

Finish lamb: Preheat a stove-top cast iron grill or barbeque to high heat. Place lamb on the grill and cook for 2 to 3 minutes per side.

Curry Sauce
In a large bowl, combine cream, salt, paprika, cayenne, fenugreek leaves and lemon juice. Heat 3 to 4 Tbsp of the oil in a medium pot on medium heat and sauté garlic until golden. Stir in turmeric and cook for 1 minute. Stir in the cream mixture and cook on low to medium heat for about 5 minutes, or until it is gently boiling.

To serve: Serve popsicles piping hot off the grill. Place four to five lamb chops on each plate. Pour the cream curry over the meat or ladle it into a small bowl and use it as a dipping sauce for the popsicles.

baked eggs in potatoes for father’s day!

Happy Father’s Day! Hope all you fathers had a lovely day being celebrated.

We started our day with a breakfast for the dads in our life. It’s always nice to share a meal and celebrate the ones we love.

Not wanting to do something we had done before, hubby and I decided on these baked eggs in potato shells. Prepped the night before, it didn’t take long to have ready for today.

Along with these eggs, we served beef sausages, roasted potato wedges – made with the extras from the prepped potatoes, french bread with homemade whipped butter, sourdough toast with warm ricotta and watermelon and cantaloupe balls in a watermelon “bowl”.

Although a little time consuming, these were really easy to make. Last night, we washed, oiled and baked the potatoes for an hour. We then cut little wedges out of the top and scooped out part of the potato. This morning, we made an egg mixture with veggies and cheese, filled the potato shells and baked for half an hour. The eggs and potatoes were a hit and were quite filling. It is definitely something we would make again.

happy mother's day!

Hope all you moms out there had a wonderful day being celebrated! My day started with flowers and breakfast in bed, made by hubby and Q. Croissant tart shells filled with scrambled eggs and sausages, the boys went all out! It was so cute hearing them cook together!

In the afternoon, we had our folks come over, to celebrate our moms. The menu was simple – beef short ribs and fried mogo (casava). Spicy ribs along with sweet Maui ribs, my cousin’s recipe, with crispy mogo dunked in tamarind chutney…it was perfect. 

The day ended on a sweet note with creme caramel made by mom.

It was a lovely day, with close family and good food. What more could you ask for?
