Via Cibo has opened it’s second location in Calgary.  Having heard great reviews about the first Calgary location in Deerfoot Meadows, I was excited to see what the Italian restaurant had in store.

Inspired by Italian street food, Via Cibo is a chef-driven fast food restaurant, meaning high quality food but fast casual service. You order and pay at the counter but your made to order food is brought to you. From salads and sandwiches to pasta and pizza, there is something for everyone.

The Tuscan Fries sounded very tempting and I just couldn’t resist. With rosemary sea salt, truffle oil and shaved grana padano cheese, they were decadent and perfect for sharing.

For the main, I tried the Pasta Al Ragu Di Ossobuco.  The penne was served with a braised veal ragu and cheese and a side of garlic bread. Comfort food at it’s best!

If you’re looking for a sweet ending, Via Cibo has an assortment of gelato. The Nutella with the coconut sorbet was the perfect combination.

I definitely will be coming back to Via Cibo to try their other offerings.

sky 360 and the big taste calgary

It’s time for The Big Taste in Calgary – every foodie’s favourite week! Hubby and I checked out Sky 360 for lunch last weekend and it was great. It had been years since I’ve been to the Calgary Tower and this was a nice treat. As we lunched on our 3 course, $25 menu, the floor of the restaurant rotated and we got an amazing view of our city.

The first course for The Big Taste was either a soup or a salad. We both went with the Greens Salad which contained carrot chips, cucumbers, shave radish and topped with a pomegranate and pink peppercorn vinaigrette.

For the second course, I went with the Grilled Blackened Chicken sandwich which was served on fresh focaccia. The bread was so good and the chicken had a nice kick to it. The fries that were served on the side were cooked to perfection. Hubby went with the burger which was also very good.

We ended our meal with a cream cheese gelato served with strawberries.

After the meal, we were able to enjoy the tower from the observation deck. The glass floor was kind of scary – I had to not look down in order to take this picture.

It was a great meal, definitely worth a visit. Considering a trip to the top is $18, the lunch during The Big Taste is a great deal!

jalapeno popper dip

One of everyone’s favourite appetizers is a jalapeno popper. Jalapenos filled with cream cheese, coated in a bread crumb mixture and deep fried. Yummy! I thought that this combo would be great for a Superbowl party, but in dip form.  Every sports party has to have a great dip and this one fits the bill!

This warm dip is creamy and cheesy with the perfect amount of crunch from the panko topping and heat from the jalapenos. It is perfect for serving with crackers or crostini.

Jalapeno Popper Dip

1 block cream cheese, softened
1/2 cup mozzarella
1/2 cup parmesan cheese
125mL can jalapenos
1 cup panko
1/2 cup parmesan cheese
2 TB olive oil

In a bowl, combine the cream cheese, mozzarella and parmesan cheese until well combined. Add the jalapenos and mix well. Put into an oven safe dish. In a separate bowl, combine the panko, parmesan cheese and olive oil. Sprinkle the breadcrumb mixture on top of the cheese. Bake at 375 degrees for 15 – 20 minutes. Enjoy with crackers or bread.

brie in puff pastry

Q’s favourite cheese would have to be brie. So, when I made him responsible for a couple of appetizers at our Christmas Eve appetizer party, naturally, he wanted to make something with brie.

This brie in puff pastry is so easy to make and so delicious to eat. It is perfect for a party – the cheese oozing out of the pastry was a sight to see. It definitely was a winner!

Brie in Puff Pastry

1 sheet puff pastry
1 small round brie
1 egg, beaten

Place the brie in the middle of the puff pastry. Bring the edges of the pastry up so that the cheese is nicely wrapped. Brush the egg on top off the pastry.

Bake on parchment at 425 degrees until golden, approximately 25 minutes.

It’s my favourite time of year! Christmas is not a religious holiday for us but we love to celebrate it! I love putting up the tree and sitting in the dark watching the lights reflect off the ornaments. I love driving around and seeing how people have decorated their houses. Most of all, I love spending time with family and friends. These gatherings ALWAYS include delicious, comforting food.

I recently partnered with Del Monte (the makers of premium canned vegetables and so much more) to share some fun stats on what people love to eat during the holidays. They just published their Del Monte Comfort Food Index, which ranked the Top 10 Holiday Comfort Foods.

Potatoes (mashed or scalloped):  84% (percent who feel “comfort” by eating the food)

Pie:  82%

Baked goods (cookies & muffins):  81%

Macaroni & cheese:  75%

Cake:  71%

Casserole:  69%

Stews and hearty soups:  68%

Meatballs (with or without pasta:  65%

Sweet potatoes (mashed or cut):  61%

Cornbread:  60%

It is definitely not surprising that potatoes, pies and baked goods are on the top of the list. All of our faves!

Going through the Del Monte America’s Recipe site, I was inspired by the recipes that are available. A few stand out, which I’m hoping to make in the next couple of weeks.  I recently tried my hand at scalloped potatoes and loved them. I’m looking forward to trying out the skinny version on the Del Monte site. I also want to try out the Green Bean Casserole. I love the idea of putting fried onions on top!

chicken chili

The days are getting cold and all we want to eat around here is something warm and comforting. This chicken chili hits the spot! I’m always looking for ways to use up leftover chicken, whether it be bbq’d or rotisserie and this is the perfect way to do it.

This chili tastes great if you let it simmer on the stove for a while, let all the ingredients come together. The house will smell incredible and be filled with warmth. Perfect for these cold days.

Chicken Chili

2 pounds cooked chicken, shredded
2 carrots, diced
1 onion, diced
2 cans (540mL) mixed beans
1 can (796 mL) crushed tomatoes
3 cloves garlic, minced
2 tsp coriander powder
1 tsp cumin powder
2 tsp paprika
1 TB olive oil
1/2 cup water
salt
pepper
chili powder, as desired

In a large pot, add oil and cook the onions and carrots until softened. Add the chicken, beans, tomatoes and spices along with the water and let simmer for 30 – 45 minutes. Top with cheese and cilantro.

1 can mixed beans, drained
1 can crushed tomatoes
2 – 4 tablespoons chili powder
1 clove garlic, minced
1 1/2 teaspoons coriander powder
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
1 large onion, chopped

carrot cake

Today is my mom’s birthday. She is a special person, always doing what she can for all of us. She doesn’t ask for anything. The least I could do was make her a cake.
This moist cake is warm from the cinnamon and packed with nuts
because that’s what she loves. And since there’s carrots, we can
convince ourselves that it’s okay to eat because we are eating our
veggies.

Carrot Cake

2 cups carrots, grated
1 cup oil
3 eggs
1 cup sugar
1 1/2 cups flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp cinnamon
1/4 cup walnuts, chopped
1/4 cup almonds, chopped

In a blender, mix together the carrots, oil and eggs. Transfer to a bowl and add the dry ingredients. Carefully fold in the nuts. Put batter into a 9″ cake pan and bake at 350 for 35 to 40 minutes.  Top with cream cheese icing and nuts.

pumpkin cinnamon rolls

I don’t cook often with pumpkin but for some reason, I got it in my head that I had to make some pumpkin cinnamon rolls. Cinnamon rolls are one of Q’s favourites so he was totally on board and couldn’t wait to help.

I loved working with this dough – so smooth. It was easy to roll out and then cover in butter, sugar and spices. The house smelled amazing as they baked and we couldn’t wait to smother them in cream cheese icing before digging in. Q loved these, saying that these may be better than the original.

 

Pumpkin Cinnamon Rolls

2/3 cup warm milk
2 eggs, room temperature
1/3 cup butter, melted
1/2 cup pumpkin puree
4 1/2 cups all purpose flour
1 tsp salt
1/2 cup white sugar
2 1/4 tsp instant yeast

3/4 cup brown sugar, packed
1 1/2 TB ground cinnamon
1 TB all spice
1/2 cup butter, softened

Microwave the milk for 45 to 60 seconds. Then, dissolve yeast in warm milk in a large bowl. Add sugar, butter, salt, eggs, pumpkin and flour. Mix well. Allow the dough to come together with the dough hook of the mixer.

Put the ball of dough into a bowl that is sprayed with cooking spray.  Cover the bowl tightly with plastic wrap and let rise in a warm place for roughly 1 hour or until dough has doubled in size.

In a bowl, combine the brown sugar, all spice and cinnamon. Once the dough has risen, roll it out into a rectangle.  Spread the softened butter on the dough and then sprinkle with the sugar and spice mix.

Roll up the dough starting with the longer side and cut into rolls. Place the cinnamon rolls in a lightly greased rectangular pan. Let the rolls rise another 30 to 60 minutes.

Preheat oven to 350 degree.  Once your cinnamon rolls have risen, bake them in the preheated oven until golden brown, approximately 18 to 20 minutes.

Eat warm as is or with some delicious cream cheese frosting.

rectangle, I cut off all the edges and the scraps made an additional 12
mini rolls.

Place the cinnamon rolls in a lightly greased rectangular pan. Let the rolls rise another 30 to 60 minutes.

Preheat oven to 350 degree.  Once your cinnamon rolls have risen, bake
them in the preheated oven until golden brown, approximately 18 to 20
minutes.

FBC 2015

There’s something about being in a room of bloggers who get what you do.
Who all stop to take pictures of food before devouring it and who
appreciate good food. A meeting of like minded people and a
learning-filled few days. That’s what I got to do a couple weekends ago. I
headed to Montreal for the third Food Bloggers of Canada Conference. I
had such a great time at my first one last year in Vancouver and
couldn’t wait to go again.

I was happy to discover that a few fellow Calgary bloggers also made the
trek – Heather, Merry and Bernice. I also finally met Ginni, who I
somehow never connected with when she lived in Calgary.

I reached Montreal on Friday
and met Nicole at the airport. Luckily she reached out
so we shared a cab to Le Westin, in old Montreal. We
quickly checked in and registered and got an amazing swag bag. Thank
you to all the great sponsors, you totally spoiled us!

 

We had a couple of hours before the party got started and so headed out
with a group of bloggers for an informal tour of Old Montreal, led by
Aimee. We stopped at Olive and Gourmando for a quick pastry. The place
was crowded and for people who wanted to dine in, there was a 45 minute
wait. Nicole and I shared the chocolate ginger bar. It looked like a
great place.

We then headed to Maison Christian Faure, a French pastry
shop. It was a beautiful store with macarons, cakes, ice cream and
pastries. I had the almond croissant which was buttery and delicious.

We
then headed to the maple shop, Canadian Maple Delights. We were able to
sample some of their syrups and were given a little tutorial on the
difference between the dark syrup and the light. My favourite thing in
the shop was the maple taffy. They poured the maple syrup on ice and you
were able to roll it into a wooden stick. It was so good! It was a nice
introduction to Montreal with the cobblestone streets and the old
architecture and a fun way to meet my fellow bloggers before the
conference got underway.

Before dinner, there was a cocktail reception where we ate delicious
appetizers and met with some of the sponsors. It was a fun event, meeting with people who I only knew of online.

Dinner that night was sponsored by the Turkey Farmers of Canada. Our
appetizer was Turkey confit rillette with a blueberry basil vinaigrette,
crostini and a sundried blueberry and arugula salad. It was very tasty.

Our entree was Turkey paupiette with goat cheese and butternut squash
purée and turkey sausage wontons with sage buerre blanc. It had looked
like I had licked my plate, so that should give you an indication of how
delicious it was.

Dessert was a little bit different as it also included some Turkey. The
brioche bread pudding was served with dolce de leche, carmelized apples
and a smoked turkey skin brittle. I was surprised to find that
underneath the apples, there were chunks of Turkey! Dinner was followed
by a preview of  Devour the Food Film Fest.

Saturday
morning’s breakfast was fantastic! Sponsored by Burnbrae Farms and
Gourmet Garden, we were treated to a poached egg breakfast bar. Chefs
made us a bowl with roasted potatoes, a choice of vegetables and Garden
Gourmet herbs. This was then topped with a poached egg and cheese. A
great start to the day for sure.

We were inspired (and fed) by keynote Ricardo, entertained by emcee
Mairlyn, motivated by Meghan Telpner, educated in copyright and contest law by Lesley Ellen Harris and Sarah Huggins and SEO by Casey Markee.

Lunch was sponsored by the Dairy Farmers of Canada and we were spoiled
with some great grilled cheese sandwiches. I had the duck with
carmelized onions alongside some roasted tomato soup. Comfort food at
its best.

My sister came to visit me from Ottawa for the day so we spent the
afternoon walking and exploring. We made a stop at Juliette et Chocolat.
There was a wait for a table so we opted for take out. It was fun
watching all the creations come out of the busy kitchen. We shared a
very rich hot chocolate and a brownie cookie. It was a nice time to be
in Montreal, all the leaves looking beautiful in red, orange and yellow.

Dinner that night was sponsored by Canadian Lentils. The food was great
but my pictures were not, there was no light to take the pictures.
You’re just going to have to trust me that it was all beautiful.

We
started with smoked and fresh trout tartar with brown lentil blinis and
an apple lentil sprout and fennel salad. Our entree was a lentil strudel
curry on braised beef cheek in a lemongrass coconut sauce. Dessert was
lentil chocolate cake. During the courses, we were entertain and amazed
by Cirque Eloize – the strength and contortion abilities of the
performers left us in awe.

Sunday’s
breakfast was sponsored by Half Your Plate and was another winner. We
had bagels from St. Viateur with lox and cream cheese and a huge
assortment of fruit.

We had another great day of sessions learning about photography from
Andrew Scrivani, enjoying a panel discussion from Farm and Food Care Canada, and being inspired by Davida and
Ayngelina who turned their blogs into a business.

To get the true Montreal experience, they brought Schwartz’s Deli to us
and we enjoyed smoked meat sandwiches complete with pickles, coleslaw,
chips and black cherry cola for lunch. We had the opportunity to meet
with brands and make connections, a new thing they tried out this year.

All in all, it was a great conference. I met some friendly, inspiring
bloggers, ate some really good food and learned a lot! The weekend was
about taking a leap and from what I learned, I was able to set some
goals in order to do that.

A huge thank you to Melissa and Ethan, who planned another successful
conference. All your hard work definitely paid off. Looking forward to
the next one in Toronto in 2016!

cabela’s in calgary…and a giveaway!

Calgary’s first Cabela’s opens to the public a week from today! On Thursday, October 15, you will be able to check out the 70,000 square foot store located at Deerfoot City. Hubby, the kids and I got a sneak peak of the store a couple days ago and were blown away!

The store is designed to give customers an outdoor-like experience. Wildlife displays are all over the store. The animals they have chosen are ones that you would find in Alberta like bears, ducks and raccoons. Z loved them! They went into the Glenbow Museum archives to get local pictures to use in their decor. It was quite impressive.

We sampled crackers, cheese and game meats that will be available for Christmas. I was happy to find that the Elk Summer Sausage and the Elk Pepperoni didn’t have pork casing and we really enjoyed them. I’ll definitely be coming back to stock up on them for the holidays.

The Archery Range was so much fun and Q and I had a great time learning the proper technique. The Fudge Shop smelled so good as they made over 40 flavours of fudge. I can vouch for their tastiness along with the roasted nuts from the nut cart. Yum!

The cooking section was extensive and I seemed to want everything they offered! From smokers to seasonings, they had a huge selection to make any cook happy.
