slushy watermelon limeade

August 2, 2016 By Fareen Leave a Comment

After a day out in the sun, we needed something to cool us down. This watermelon limeade is cool and refreshing and only two ingredients!

During the summer, we always have watermelon chilling in the fridge. I dumped that in the blender and made a beautiful ruby juice. It did need some tang and the concentrated limeade made the best addition. This was blended with enough ice to make the perfect slushy summer treat.

Slushy Watermelon Limeade

3 cups watermelon juice (blended watermelon)
1 cup ice
1 limeade concentrate – 295mL can

In a blender, combine the blended watermelon, ice and the frozen limeade concentrate. Blend. Enjoy!

wonderful watermelon

June 30, 2016 By Fareen 4 Comments

It’s almost time for the long weekend! Time for food on the grill, hanging with friends, and of course, watermelon! Watermelon is the ultimate summer time fruit. Summer memories always include hot days eating cold watermelon. It is so refreshing and also so versatile!

Having this delicious fruit as a sweet treat is an easy way to serve it, but I love adding a savoury touch. I drizzle watermelon with some olive oil and balsamic vinegar and finish with a sprinkle of feta and basil. Not a common pairing but oh so good!

The ideas on how to serve watermelon are endless. Check out all the fabulous recipes below!

watermelon lime spritzer

August 4, 2015 By Fareen Leave a Comment

We thoroughly enjoyed the long weekend. Saturday was beautiful and hot and a great day to spend on the water. The kids were excited to go tubing and even Z went in the tube with hubby.

We had friends over after and had a great time cooking together in the kitchen and barbecuing outside. We had chicken, beef kebabs, warm potato salad and fresh naan. It was delicious!

We quenched our thirst with watermelon drinks. The kids had blended watermelon, happily pouring their drinks from the watermelon keg.

For our drinks, we had watermelon lime spritzers. The combination of the watermelon, lime and mint was refreshing. Perfect for a hot summer day!

Watermelon Lime Spritzer

1/4 cup blended watermelon, strained
1/4 lime, juiced
simple syrup
mint leaves
sparkling or still water

Fill a glass with ice. Add the blended watermelon, strained. Add the lime and a splash of simple syrup – as sweet as you like it. Top the glass off with your choice of still or sparkling water. Garnish with mint. Enjoy!

watermelon rose smoothie

September 10, 2012 By Fareen 1 Comment

A couple of months ago, the National Watermelon Promotion Board sent me this lovely basket for Q and I. With matching watermelon aprons, we set out to make a kid friendly snack.  We came up with this smoothie and have been making it all summer but forgot all about posting it!

This is a refreshing drink and allows your child to not only get some fruit but also some dairy.  The addition of rose syrup makes it extra special.

In a blender, add some watermelon, a few ice cubes, a small squeeze of agave syrup, some milk and a splash of rose syrup and blend it all up.  Q was a great help in dumping things in and pressing the buttons.  The result is a fun little drink for kids of all ages.

Another fave of mine is the watermelon, feta and mint salad.  You can check out the recipe here.

Watermelon, Feta and Mint Salad

May 18, 2010 By Fareen 1 Comment

Watermelon, feta, mint….who knew combining sweet watermelon with creamy cheese and mint would taste so good. It’s amazing how well it works together – trust me.

After cold weather and a snow fall this month, it’s nice to finally have lovely May weather.  The weekend was spent outdoors. We enjoyed the plus 20 temperatures that we had eagerly been awaiting.  Sunday afternoon on the boat led to barbecuing indian spiced and korean bbq ribs.

This watermelon, feta and mint salad was such a refreshing accompaniment to the meal.  This unexpected combination of sweet watermelon, creamy cheese accented with sweet red onions and mint definitely felt like “summer in a bowl”.  Take it to your next potluck – it will be the most talked about dish.

Update – August 2019 – My 5 year old helped me make this salad today. He was so confused about the addition of onions to his beloved watermelon. He would not try the salad but I was not upset about it. It just meant there was more for hubby and I to enjoy!
