naan

When we purchased a tandoor a couple years ago, one thing we wanted to work on was a good naan recipe. It needed to be fast, it needed to be tasty and it needed to stick well to the side of the clay oven.

It’s been fun trying out various versions of naan in the tandoor. Doughs with eggs that were nice and smooth were finicky in the tandoor. Doughs that I thought for sure wouldn’t work well were the ones that worked the best. After a lot of trial and error, we discovered the best recipe.

This naan recipe is very simple and doesn’t need a lot of rising time. Perfect when you want to make a batch at the last minute. Don’t worry, you don’t need a tandoor to enjoy these. We tried these on the grill over the weekend and they turned out great!

Naan
(for the tandoor or the bbq)

1 tsp instant yeast
1/2 cup water
1 tsp sugar
1 tsp salt
2 TB oil
1/4 cup yogurt
2 cups flour
butter

In a mixer bowl, dissolve the yeast in the water along with some sugar. Let it sit for about 10 minutes until it’s frothy. Add the remaining ingredients and knead the dough using the kneading hook. Place the dough in a warm place for about 20 minutes covered with a moist cloth.

Divide the dough into eight balls and roll them out. They can be done either on the tandoor or the bbq. They should only take a few minutes a side. Remove and butter the naan.

banana cake

There’s something about a bundt cake. It looks great, provides comfort and always seems to impress.

My mom makes really amazing banana cupcakes.They are moist and flavourful and perfect for on the go. I decided to use her recipe but made a bundt to serve for dessert. The ripe bananas made the cake sweet and the chocolate paired so well with the fruit.

The cake itself was fine on its own but I thought I’d make it even better – I added chocolate on top! I made a quick ganache and once it was a little cool, I poured it on top of the cake. It took it to another level. Chocolate always seems to have that effect.

Banana Cake

1 cup butter
1 cup sugar
2 eggs
2 ripe bananas
2 1/4 cup flour
1/2 tsp baking soda
1 tsp baking powder
1 cup yogurt
1/2 cup chocolate chips

1 cup chocolate chips
1 cup whipping cream

icing sugar

Cream together the butter and sugar. Add eggs, one at a time, until incorporated. Mash the bananas and add to the mixture.

Add the flour, baking soda and baking powder. Add in the yogurt and the chocolate chips.

Pour the batter into a greased bundt pan or muffin pan. Bake at 350 degrees for 45 minutes.

For the topping, heat the whipping cream until it starts boiling. Pour over the chocolate chips. Let cool a bit and then pour on top of the cooled cake. It’s best to place the cake on top of a rack placed on top of a tray. Dust with icing sugar.

cream scones

Happy belated Father’s Day! Hope all the daddies out there had a wonderful father’s day yesterday!

Our breakfast was a last minute arrangement so we wanted something that was quick and stress-free. We celebrated the dads with a breakfast of steak and eggs. I made a huge batch of scrambled eggs, thinking this would be better than making everyone individual omelets.

Hubby sprinkled some streak with lots of Montreal Steak Spiced which was done on the grill. The combo of the steak and eggs was just perfect for a celebration breakfast.

To go with the steak and eggs, I quickly whipped up a batch of cream scones. This is my favourite recipe for scones! It’s a great way to use up any extra whipping cream you may have lying around. It’s also a quick and easy way to make scones – no rolling, no cutting – it’s perfect when you’re in a hurry.

I discovered Julie’s recipe on Babble a couple of years ago and have loved it every since. Best served warm with butter and jam, they are sure to be a fave.

Cream Scones
From Babble

1 1/3 cups all-purpose flour
2 Tbsp. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1 cup whipping cream

Preheat the oven to 400F. In a medium bowl, stir together the flour, sugar, baking powder and salt. Add the cream and stir just until the dough comes together. Drop by the large spoonful onto a greased or parchment-lined baking sheet. Bake for 15-20 minutes, or until golden. Serve warm. Makes about 1 dozen scones.

2-ingredient nutella brownies

Hello March! You came by too quickly but we are very happy to see you! March is birthday month (yay?) but also Blogiversary month! It’s been 5 years since the creation of Food Mamma. We will be celebrating all month long with giveaways from some awesome folks – more on that to come!

When I saw the post about brownies with only 2 ingredients, I was intrigued. When I learned that one of the ingredients was Nutella, well, I just had to try it for myself.  The recipe called for 4 eggs, I had 3 and I still needed to make breakfast. I used one egg for french toast and the other 2 to make a small batch of these brownies.

With two ingredients, the batter came together quite quickly. The waiting for the brownies to be baked and cooled, well, that seemed like it took forever. Q came into the kitchen every five minutes, is it done yet?

To make it look pretty, I did add powdered sugar, but you don’t have to. The brownies were dense and fudgy and oh so good. I kind of wish they weren’t so easy – it’s a dangerous recipe to have!

2-Ingredient Nutella Brownies
Recipe from Diethood

4 large eggs
1 cup Nutella

Preheat oven to 350.
Line an 8×8 brownie pan with parchment paper; set aside.
Place the eggs in your mixer’s bowl and beat for 5 to 7 minutes, or until the eggs have tripled in size.
Heat the Nutella in the microwave for 60 seconds. Remove and stir.
Slowly pour a stream of the warm Nutella over the eggs, beating until mixture is thoroughly combined.
Pour batter into prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted in the middle comes out with very few crumbs.
Remove and let completely cool before cutting.
Dust with powdered sugar.
Cut into bars and serve.

vitumbua

Hubby was away this weekend but we kept ourselves busy. Q and I made it to the movies to see Paddington, which I just loved! Set in London, it really made me miss the place. Definitely worth a visit soon!
Breakfast was a treat this weekend with my mom making vitumbua, an East African treat. Made with rice flour and coconut and flavoured with cardamom and nutmeg, these little cakes are brown almost crunchy on the outside and fluffy on the inside.

These are made in kadais, kind of like little cast iron woks.They can also be made in a dutch pancake pan. These are perfect for breakfast with a steaming cup of chai.

Vitumbua 

2 lb rice flour
2 tsp instant yeast
3/4  of a 141 g package of pure creamed coconut
3 eggs
2 1/2 cups sugar
1/2 tsp cardamom
1/2 tsp nutmeg
water 

On the stove, combine 1/2 cup of water with the coconut until it is melted. Combine this with the flour and yeast and add enough water to make a thick batter. Keep overnight.
In the morning, to the yeast mixture, add eggs, sugar, cardamom and nutmeg. Mix well. Let this sit for half an hour. 

If using a large kadai, add 2 TB of oil to each pan and heat the oil on high heat. Once heated, turn down the heat to medium, add 1/4 cup of batter and cook until brown. Turn using a couple of spoons or forks and continue cooking. Each vitumbua takes approximately 5 minutes to cook.

corbeaux bakehouse

After seeing all the delicious pictures being posted on Instagram about Corbeaux Bakehouse, I couldn’t wait to check it out for myself. Located in the former Melrose, the space had been transformed and it looked like a little bit of Europe in Calgary.

We arrived early on Friday and were happy to be seated right away. I had a cup of hot chocolate while I decided on breakfast. There were a lot of choices!

We knew we had to try the bread so we shared the bread basket which contained a few varieties along with butter and jam. The bread was so good and comforting and way more than two people needed to eat.

 

I was happy to see the buratta on the menu and we definitely wanted to try that. The cheese was soft and paired well with the tomato jam that it was served with. The jam was our favourite, sweet with a kick of spice.
I opted for the duo of poached eggs with salt, pepper and gremolata. We also ordered some bakehouse potatoes to go with our eggs. The potatoes were cooked up in duck fat with some caramelized onions and green onions. They made the perfect accompaniment to the eggs.
We also indulged and ordered some hollandaise sauce for the eggs. Definitely worth the splurge!
Our very delicious and filling breakfast was finished off with brioche donuts with lemon curd which were served nice and warm.

 

Along with their sit down menu, Corbeaux offers a huge variety of pastries and cakes that you can enjoy. With his sweet tooth, I knew Q would love the almond croissant which he devoured after dinner.
It was a great morning and I can’t wait to go back to try out all their lunch and dinner offerings. Definitely a place worth checking out!

food bloggers of canada conference #fbc2014

One of the highlights of this year was attending the Food Bloggers of Canada Conference in October. Not wanting to miss another conference, I had registered for this one the day the tickets came on sale. It had been something I was looking forward to for months and it did not disappoint!  It was a great weekend with good food and making connections with some amazing people. So happy I brought a selfie stick with me to capture it all!

I was hoping to do a recap right after getting back but life got in the way. Better late than never!

A huge thank you to Melissa and Ethan for putting on a very successful event. We were spoiled and it was clear how much work you guys had put into making us feel that way.

The Venue
The conference was held at the Four Seasons Hotel right in downtown Vancouver. It was the perfect venue, being close to shopping, great restaurants and the water. Needing to capitalize on the fact that I was without kids and could catch up on sleep, my single room was a treat! 

The Bloggers
It was so great to meet with bloggers whose blogs I have been following and putting faces to twitter handles. Everyone was so friendly! 

It was really impressive to me that veteran bloggers who had highly successful blogs were willing to share their knowledge. No one was afraid of competition, but rather were excited to share their strategies to see more bloggers find success. This is huge! It plays a big role in creating this awesome community that Melissa and Ethan began when starting FBC.

The Sessions
The sessions were so informative. The speakers that participated were full of knowledge and I just absorbed everything they all had to say. It got me thinking of the goals that I have for my blog and what I need to do to achieve them. 

We also got a chance to hear from the dynamic duo of Thug Kitchen, who entertained us at dinner the second night. They were happy to be part of a selfie!

The Swag
The sponsors totally outdid themselves and we were spoiled with all the swag we got to take home. Of course, the spoiling started long before we made it to the conference with knives from Chicago Cutlery and cookware from Nordicware.

The Food
Last but not least, the food! Of course the food at a food bloggers conference was a huge part of the weekend. We were fed very well! The breakfasts, the lunches, the dinners and of course all the snacks, there was definitely no going hungry. Here is a glimpse of some of the delicious food we ate.

sour cream cake with cherries

One of my favourite parts of summer are the delicious cherries that we get to enjoy. I could eat bowls of them, just by myself. Not only delicious fresh from the market, they are even great when used for baking. Cherry pie, yum!

I had been thinking about this for a while and I finally had a chance over the weekend to try it out.  One of my go-to cake recipes studded with cherries. The cake came out of the oven with the cherries blackened and the flavour intensified from the roasting.

It was a really great combination, served with a sprinkle of icing sugar right on top.

Sour Cream Cake with Cherries

1 cup butter
1 1/4 cup sugar
1 tsp vanilla
2 eggs
1 cup sour cream
2 cups flour
1/2 tsp baking soda
1 tsp salt
1 1/2 tsp baking powder
1 cup cherries, pitted and halved

Combine the butter and sugar and beat for a couple of minutes. Add the vanilla and eggs until incorporated.  Add the sour cream.

In a separate bowl, combine the dry ingredients and add to the butter and egg mixture.  Put batter in a greased 9″ x 12″ baking pan and top with the halved cherries. Bake at 350 degrees for 1 hour.  Once cooled, cut into squares and sprinkle with icing sugar.

1 tsp salt
1 1/2 tsp baking powder

soft and chewy chocolate chip, pecan and coconut cookies

Although I haven’t been getting on my computer much to share some tasty treats, we have been busy in the kitchen. I’m hoping to catch up in the next little bit!

We have been using the same recipe for chocolate chip cookies for a while. If a recipe is good, why not let it be your go-to, right? Q and I decided to change things up last week and came up something new. These cookies are soft and chewy and contain not only chocolate, but some of our other favourites like pecans and coconut. 

Just to warn you, these moist cookies are very addictive! Made even more perfect with a glass of milk.

Chocolate Chip, Pecan and Coconut Cookies

1 cup butter
1 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup semi-sweet chocolate chips
1 cup pecans
1/2 cup shredded coconut

Beat the butter with the sugars until well mixed. Beat in eggs and vanilla. Add the flour, baking soda and salt and beat. Stir in the chocolate chips, pecans and coconut. Using a small cookie scoop, drop onto a parchment lined cookie sheet. Bake for 12 minutes at 375 degrees.
