The slow cooker is always welcomed around here, especially on the weekend. It’s nice to dump things in in the morning, enjoy our day as a family and still sit down to a great home cooked meal. A couple weeks ago, we enjoyed these beef ribs with fig bbq sauce. These saucy ribs are tender and fall off the bone. Easy and tasty – perfect for a busy Sunday.

 
 Slow Cooker Beef Ribs
1 pound beef short ribs
1 onion, diced
3 cloves garlic, chopped
1/2 cup ketchup
1/2 cup balsamic vinegar
3 TB fig spread
1 tsp cumin powder
1 tsp coriander powder
1 tsp paprika
salt
pepper
1 cup water

Pat the ribs dry and sprinkle with salt and pepper. Heat some oil in a pan and sear the meat on all sides. Place in slow cooker. In the same pan, add a little more oil and add garlic and onions until softened. Add the ketchup, vinegar, fig spread and spices and cook for a few minutes. Add the water and pour the sauce over the ribs. Cook in the slow cooker on low for six to eight hours.

1/2 poblano pepper, roasted
salt
pepper
oil
sriracha, as hot as you like it

Heat some oil in a pan and add the onions and garlic. Add the ketchup,
vinegar, fig spread and spices and cook for a few minutes. Add the
mixture to a blender along with the pepper and sriracha. – See more at:

slow cooker cinnamon almonds

The slow cooker is a wonderful thing. It makes the best tasting chili, tender ribs and the juiciest chicken. When I saw this recipe for cinnamon almonds made in the slow cooker, I was curious. Could it really be used to make sugar and cinnamon coated almonds and actually turn out well? Yes!

Unlike most recipes made in the slow cooker where you can just walk away until it’s done, this recipe requires a little extra attention, but not much. Cooked on high, these almonds are stirred every 20 minutes, to ensure that the nuts don’t get burnt.

These were delicious! They were super easy and super tasty. Put them in a little jar, and they make the perfect homemade gift for the holidays!

Slow Cooker Cinnamon Almonds 
From Crockpot 365

cooking spray
1 1/2 cups sugar
3 tablespoons cinnamon
1/8 teaspoon kosher salt
1 egg white
1 1/2 teaspoons vanilla extract
3 1/4 cups whole raw almonds  

Use a 4-quart slow cooker. Spray the stoneware well with cooking spray. In a mixing bowl, combine sugar, cinnamon, and salt. Set this bowl aside 

In a larger mixing bowl, whisk together the egg white and vanilla extract. Pour the almonds into this bowl and stir well to coat. Add your cinnamon mixture to the top of the nuts and toss with spoons to fully coat. 

Put the almonds into the slow cooker and cover. Cook on high for 2 hours, stirring every 20 minutes. After 2 hours, take the nuts out of the slow cooker and spread them on foil or parchment paper.

turkey chili

When given a choice, Q would rather have a home cooked meal over eating out. He doesn’t like the usual things you can find on a kids menu. Chicken strips and mac and cheese, forget about it. A bowl full of chili though, and he’s a happy camper.

I tweaked my original chili recipe, omitting chili powder all together and adding more of everything else to ensure a flavourful bowl of goodness. With everything thrown into the slow cooker the night before, we have a hearty lunch ready in the morning with hardly any effort.

You know its a great recipe when my picky little guy asks for seconds. Q likes his topped with cheese, lots of it. It’s also great with some sour cream and green onions or over a baked potato.

Turkey Chili

2 pounds ground turkey, browned and drained
2, 19 oz cans of mixed beans, drained
1, 28oz can crushed tomatoes
2 cloves garlic, minced
3 tsp coriander powder
2 tsp sweet paprika
1 tsp salt
1 tsp pepper
1 TB olive oil
1 large onion, chopped
1/2 cup water

Combine all ingredients in slow cooker and mix thoroughly.
Cook on low for 8 hours. Top with cheese, onions or sour cream.

comforting slow cooker chili

Its getting cold out there!  The winter chill is in the air and its not even fall (almost, but not quite)!  With a weekend filled with cold and rain, comfort food was called for, like slow cooker chili.

I love the slow cooker.  You dump things in, plug it in and let it sit and cook for you.  Plug it in in the morning and you have a delicious meal waiting for you when you come back home from work.  I prefer plugging it in at night and enjoying the wonderful smells as I sleep.

This is the easiest chili recipe and its delicious.  Perfect for those cold, rainy days. 

Slow Cooker Chili2 pounds ground beef, chicken or turkey, browned and drained
1 can mixed beans, drained
1 can crushed tomatoes
2 – 4 tablespoons chili powder
1 clove garlic, minced
1 1/2 teaspoons coriander powder
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
1 large onion, chopped
1/2 cup water
 

Combine all ingredients in slow cooker and mix thoroughly.
Cook on low for 8 hours.
