If you really need an excuse to eat pie, well, here’s a great one for you! Today is Pi(e) Day!
I wanted to make a pie for Pi Day but wanted to try something new. I had an idea I wanted to test and this was the perfect day to do it. Remember the Nutella Pot De Cremes I had made for Valentine’s Day? I really did love the mousse-like texture and thought it would be perfect in a pie. Using a frozen, ready-made pie crust, I baked it and let it cool. Meanwhile, I made the pot de creme mixture and, once the shell was cooled, poured it into the crust and let it set. It didn’t take too long, only a couple of hours. Add some whip, grate some chocolate and you have the perfect celebratory dish for the day.

Nutella Pie
1 prepared pie shell
1 cup chocolate chips
1/4 cup Nutella
2 egg yolks
1 1/2 cup whipping cream
1 cup whipping cream
1 TB icing sugar
Bake the pie shell as per directions and let cool.
In a blender, combine the chocolate chips, Nutella and egg yolks and blend together. Meanwhile, heat up the whipping cream until bubbles start to form but not boiling. Add the whipping cream slowly through the lid of the blender while blending on low. Once combined, pour the mixture into the cooled crust. Let set for 2 to 3 hours.
Blend the cream and the sugar until whipped. Top the pie with the whipped cream and shaved chocolate if you wish.

Valentine’s Day is this weekend, and as fun as it is to go out, sometimes it’s nice to have a quiet meal at home…or, a loud and crazy if you have the kids at home with you.
Nutella Pot De Creme is the perfect dessert to celebrate the day of love. It takes minutes to prepare, so you can spend the day with your loved one, and is super easy. The fancy sounding chocolate pudding is mousse-like in texture and is creamy and chocolatey. The fact that it has Nutella makes me love it even more.
These luscious desserts take a couple hours to set so they can easily be made in advance.You can make this in large bowl or make individual desserts by placing them in glasses. Makes it look a little more fancy. Top it with a dollop of whipped cream and you’ve got yourself something to spoil your Valentine.

pecan roca for my love
It’s become tradition that I make hubby a sweet treat for Valentine’s Day every year. I just think it’s a fun holiday, nothing to spend too much money on. Just some thought and effort and of course some love.
Hubby discovered his treat early so I guess I can share it with you just in time for Valentine’s Day. This year, I decided on Pecan Roca. I made them in mini muffin tins, thinking it was probably better for portion control (for me, not him)! This recipe made 24 chocolates.
The resulting chocolates were heavenly. They had the candy crunch but were topped with chocolate, so it appeals to both candy lovers as well as chocolate lovers. So good!
Pecan Roca
1 cup chopped pecans
1 cup brown sugar
1 cup butter
1 cup chocolate chips
Spray a mini muffin tin with oil and keep aside. In a pan, combine sugar and butter and let it cook over medium heat. Using a candy thermometer, cook the mixture until it get to about 280 degrees F. Remove from the heat and add 3/4 of the pecans, stirring until incorporated. Quickly spoon the mixture into the muffin tins. Top each candy with chocolate chips. After about a minute, take a spoon and smooth the melted chocolate. Sprinkle the remaining nuts on the chocolate. It’s hard but it’s best if you let these cool.

Happy Valentine’s Day! Hope you all have a fabulous day spending time with the ones you love…or take the time to spoil yourselves rotten!
Hubby and Q woke up to a bouquet of chocolate dipped strawberries and some homemade chocolate turtles. Cocoa spiced pecans were also packed into jars for my two loves.
Every year, I make hubby a chocolate treat. In the past there have been truffles, home made Ferrero and even Almond Joy. This year, I decided on Turtles! They were super easy to make, although a little less time cooking the caramel would have been ideal.
In case you overcook your caramel like I did, just chop the chocolates up and use them to top chocolate covered strawberries! It adds the perfect crunch to the juicy berries.
Shortbread cookies for work and cupcakes from yesterday’s kindergarten party rounded out our Valentine’s table. I had a box of President’s Choice Red Velvet mix from the holidays so made up the batter for that as well as the batter for sour cream cake. A scoop of each created the perfect red and white cupcake for Q to decorate with cream cheese frosting.
Chocolate Turtles
1 cup whole pecan pieces
1/2 cup cream
1/2 cup butter
1 1/2 cup brown sugar
1 TB water
1 cup chocolate
Toast the pecans and place them in pairs on a parchment lined cookie sheet.
Combine the cream, butter, brown sugar and water. Stir over medium heat until combined and smooth. Let the mixture come up to a boil and cook without stirring until 240 degrees on a candy thermometer. Watch the caramel mixture carefully. Let the caramel sit for a minute and then pour a spoonful on each pair of pecans. Let the caramel set for at least an hour.
Melt the chocolate in a microwave, stirring after every 30 second interval. Pour a spoonful on each caramel pecan bite. Let the chocolates set in the fridge.
