top ten holiday comfort foods

It’s my favourite time of year! Christmas is not a religious holiday for us but we love to celebrate it! I love putting up the tree and sitting in the dark watching the lights reflect off the ornaments. I love driving around and seeing how people have decorated their houses. Most of all, I love spending time with family and friends. These gatherings ALWAYS include delicious, comforting food.

I recently partnered with Del Monte (the makers of premium canned vegetables and so much more) to share some fun stats on what people love to eat during the holidays. They just published their Del Monte Comfort Food Index, which ranked the Top 10 Holiday Comfort Foods.

Potatoes (mashed or scalloped):  84% (percent who feel “comfort” by eating the food)

Pie:  82%

Baked goods (cookies & muffins):  81%

Macaroni & cheese:  75%

Cake:  71%

Casserole:  69%

Stews and hearty soups:  68%

Meatballs (with or without pasta:  65%

Sweet potatoes (mashed or cut):  61%

Cornbread:  60%

It is definitely not surprising that potatoes, pies and baked goods are on the top of the list. All of our faves!

Going through the Del Monte America’s Recipe site, I was inspired by the recipes that are available. A few stand out, which I’m hoping to make in the next couple of weeks.  I recently tried my hand at scalloped potatoes and loved them. I’m looking forward to trying out the skinny version on the Del Monte site. I also want to try out the Green Bean Casserole. I love the idea of putting fried onions on top!

win a one year supply of minute rice!

Rice seems to be a staple around here. It’s perfect for sopping up Indian curry or using it to make a one pot meal to feed a crowd.  I didn’t discover the convenience of instant rice until recently. Since it is pre-cooked and then dried, it significantly cuts down on the cooking time. This is huge, especially on days where the kids have multiple activities.

With “pre-cooked rice” as its only ingredient, Minute Rice® is 100% natural. Available in two varieties – Premium Long Grain White Rice and Premium Whole Grain Brown Rice – Minute Rice® takes only five minutes to prepare for white rice and 10 minutes for brown rice.

At a recent event promoting Minute Rice, Chef John Higgins, Director of the George Brown Chef School and Chopped Canada judge offered these top 10 rice cooking tips:

Boil in broth: When boiling rice, substitute water for broth to add flavour to the rice itself and your dish. Chicken broth, beef broth or vegetable stock are excellent choices. Low-sodium broths add a punch of flavour without the added salt.

Try coconut: Cook rice in coconut milk for a mildly sweet flavoured rice which pairs well with curry dishes and other spicy recipes. Coconut flavoured rice with fresh slices of mango or your kids’ favourite fruit can make a fun, healthy dessert option.

Think flavour: Add spices to the rice’s cooking liquid for an aromatic and flavourful base to your dish. Star Anise, cilantro and turmeric are good choices, with bold, robust flavours.

Season early on: Don’t leave your seasoning until the end. Introduce the flavours of your dish early on. For maximum flavour, add the herbs or spices your recipe calls for into the rice’s cooking water.

Add veggies: Enhance your rice dish by adding frozen vegetables. Rather than cooking the vegetables separately, though, condense your cooking time by adding them to boiling water before you begin cooking the rice. Using pre-cut, frozen vegetables is more convenient than cutting fresh vegetables (while still being nutritious), especially when you are pressed for time.

Sweeten with fruit: Add dried fruit – such as craisins, raisins, dried blueberries and currents – to your cooking water to draw out the sweet fruit flavours which will infuse your rice with a savoury taste the whole family will enjoy.

Try rice for breakfast: Instant rice in particular is quick and easy, making it a convenient and nutritious family option. Add almond or soy milk, or your kids’ favourite flavoured milk, as well as dried fruits or nuts for a complete, oatmeal-like breakfast dish which can be served hot or cold. Prepare the rice the night before to save time in the morning.

Steep your rice: Infuse the rice with your favourite flavour of tea for a fragrant, subtle gourmet taste. Steep a pot of tea and use the liquid to cook your rice instead of using plain water. For those less adventurous, start with a more simple flavour such as Earl Grey, English Breakfast or Chamomile tea. For an economical option, use the tea bag left over from your morning cup of tea.

Add zing with zest: For a zesty citrus spin on your rice dish, grate lemon, lime or orange zest into the rice’s cooking water as it’s boiling. Be sure to thoroughly wash your fruit with warm, soapy water before grating the zest into the water. For a more gourmet taste sensation, try a combination of citrus fruits in one rice dish.

Cut cooking time: Risotto is a wonderful meal or side dish option enjoyed by all ages, but it takes time to make.  Using instant rice in a risotto dish can cut in half the time it takes to make traditional risotto.

the weetabix #mybixmix challenge

A month ago, I was challenged to change up my morning routine with the addition of Weetabix.  Weetabix is made with four ingredients. Each two biscuit serving contains just 2g of sugar and is packed with whole grains. Low in fat, high in fibre, it just made sense to serve this to my family. With simple ingredients, it gives you a chance to personalize it the way you like, without any guilt – #mybixmix!

For a week, we started our day with a bowl of Weetabix, changing it up everyday with toppings like fruits and nuts. Here are some of the ways we enjoyed our bix!

With strawberries and agave syrup:

With a tropical twist – bananas and coconut chips:

The cereal was a hit with both the six year old and the one year old – always a bonus. It kept us full and the various toppings made it seem like a different breakfast every day.

president’s choice holiday 2014

It’s always fun to see what President’s Choice comes up with every
holiday season. They always have fun products and tasty treats that
everyone seems to love. This year was no exception!

Focused on food creations from around the world, this year President’s Choice is marketing to foodies. Like the Harissa Hummus from Morrocco, designed for the lavour seeker, which hubby loved! For the sweet tooth, like me, the PC Mini Cheesecake Cupcakes with Coconut Icing were a winner. With items like Habanero Aioli from Chile and the Goose Fat from France, there’s something for everyone.

I’m especially loving President’s Choice right now with their Crave More campaign. The fact that they have no preservatives, artificial flavours or colours is a huge plus when shopping for my family.

gluten-free vegetable pakora

I am excited to be participating in the Hidden Valley Gluten-Free Challenge. Using Hidden Valley Ranch dressings, I was to come up with a gluten-free recipe for the holidays.

The first thing that came to mind were vegetable pakora. Using chick pea flour and the Spicy Ranch dressing for flavour, I coated vegetables like cauliflower, red pepper and onions with batter and fried them until golden brown. The resulting pakora were a hit and even got my 6 year old to eat his veggies without complaint!

To make the dressing go even further, I added some garlic chili sauce to the Spicy Hidden Valley Ranch dressing. This was the perfect dip to serve with the pakora.

This would be a great appetizer for holiday entertaining because it caters to not only those who are looking for gluten-free items but also the vegetarians in your life.

Vegetable Pakora

1 cup chick pea flour
1 tsp baking powder
1/2 tsp turmeric
1/2 tsp cumin
1/2 cup Hidden Valley Ranch Spicy Dressing
1 cup water
vegetables (anything you prefer, like cauliflower, peppers, onions, potatoes…)

Mix all the ingredients together except for the vegetables. Once combined and the batter is nice and thick, coat the vegetables and fry until golden brown.

pulo lemongrass chicken salad rolls

I was so excited to receive to receive a package of  Pulo Cuisine sauces and marinades to participate in the Pulo Recipe Challenge. Pulo is an authentic collection of sauces and marinades inspired by the 7000 Islands of the Philippines. With three marinades and two cooking sauces, each loaded with amazing flavours, the possibilities on how to use them were endless.

For dinner tonight, Q and I decided to make Lemongrass Chicken Salad Rolls using the Pulo Lemongrass Marinade. The sauce itself is packed with so many complex notes that nothing else needed to be added to marinate the chicken.

The chicken was soaked in the marinade for half an hour, quickly stir fried and then added to rice paper with mint, carrots, spinach and vermicelli noodles. Q loved the process of dipping the rice paper in water until it was pliable and assembling the rolls. My picky little boy loved the flavours of the chicken; I was ecstatic that he was nibbling on the chicken without any prompting – that speaks volumes!

This was a hit with everyone and is definitely something I will be making again and again. I have so many ideas for the other sauces!

Pulo Lemongrass Chicken Salad Rolls

8 chicken thighs, cut into strips
1/2 cup Pulo Lemongrass Marinade

Mint
Carrots
Spinach
Vermicelli Noodles
Rice Paper

Cut the chicken into strips and cover with Pulo Lemongrass Marinade for at least half an hour. Stir fry until the chicken is thoroughly cooked.

Dip the rice paper into hot water until pliable. Lay on a flat surface and fill with the cooked chicken, mint, carrots, spinach and noodles. Roll and enjoy!

pc spice of the prairies burger

It’s hard to believe that summer is almost over. We had a great few months, and the heat that we enjoyed was so welcomed. The summer has definitely been one where we got out of the kitchen and used the grill as much as we could.

Earlier this year, PC challenged chefs throughout Canada to create the Ultimate Burger for their region using PC products. Food writer Dan Clapson created the Spice of the Prairies Burger made with PC Free Bison Burgers.

The folks at President’s Choice sent me some ingredients to try out Dan’s creation for myself. Dan’s creative take using the bison burger and a spicy blueberry aioli was made even better with the crunch of PC Regular Potato Chips. The heat from the aioli is mellowed out by the coolness of the lettuce with PC Sweet Vidalia Onion Salad Dressing.  Add some provolone and put it all in a pretzel bun and you’ve got yourself a winner. president’s choice for the holidays!

Christmas and baking seem to go hand in hand and that’s certainly true in this household. Baked goods as gifts for friends and family just seems so personal and special. With just a couple days left until Christmas, President’s Choice has you covered with a giant array of mixes for those with time constraints or those who think they can’t bake.

I was excited when they sent over a box of holiday goodies for me to try out. It included everything from mixing bowls, measuring cups, baking mixes, cookies as well as great hostess gifts like chocolate!

Q and I spent the morning making gingerbread men! All that we needed to add to the mix was an egg and some water. This was perfect, since I didn’t really feel like running out for some molasses and other stuff I would have needed. Q was in charge and he felt a great sense of accomplishment, being able to say that he made the cookies himself.

I loved that President’s Choice also had a gingerbread man cookie cutter complete with stencils to help with the decorating.  He gave these out to his cousins and they made cute little gifts.

President’s Choice also has some great items that would be perfect for your dinner party, either for Christmas or New Year’s. Items like the PC Moroccan Cigars or the Shrimp & Scallop Sushi Bites would be perfect appies. For dessert, our Christmas dinner will definitely include the PC Decadent Molten Chocolate Cakes. I might also have to include a sugar cookie tree (cutters from PC!).

back to school with tickety toc

Q starting kindergarten seemed to be a milestone that was so far away and here we are. After meeting his teacher last week, he had his first real day today and he loved it. He even thanked us for putting him in school! Let’s hope this enthusiasm lasts over the years.

Time is just flying by so I know that our upcoming family trip that we have booked will come in no time. We are counting down the days until we take our first Disney cruise! Hubby and I have cruised before but we are looking forward to this fun adventure with Q. If you hear me mentioning all things Disney over the next little while, now you know why.  There seem to be many tips and tricks and I spend countless hours researching them. There’s no doubt that I’m the one who’s most excited.

While tv time was once dedicated to Treehouse, we are now spending time watching the Disney channel and Q has found some new favourites – Special Agent Osso, Bananas in Pyjamas and Tickety Toc.

fibre 1 almond & cluster delight cereal…and a box for you!

Having an energetic four year old means I need to ensure he has the proper breakfast to keep him going during the day. As much as I try and tempt him with eggs, his first choice is always cereal. I always try to look for cereal that is nutritious but will get him excited. With 40% of your daily-recommended intake of fibre in one bowl, I was happy to find that the new Fibre 1 Almond & Cluster Delight Cereal kept both him and his mamma happy.

The sweet cereal was tasty and filling and the flakes had quite the crunch. My favourite were the almond-filled clusters and the slivered almonds – I am a bit of a nut freak. It was perfect with milk but also great to take on the go for a quick snack for Q…and me!
