brie and chocolate…a decadent combination!

I had the perfect sandwich yesterday.  Brie and chocolate!  Now I know some may never accept such a combination but it definitely deserves a try.  The creamy, rich brie paired with the sweetness of chocolate, then grilled to perfection – the perfect sammy for fans of sweet or savory.  Top it off with a tall glass of milk and you’ve got the perfect snack!

coo coo for kuku paka

My husband loves indian food.  Its not one of my favorite things to cook but I do feel such a sense of accomplishment when I do and it turns out.  This past weekend, I made for the first time, kuku paka – chicken in a coconut curry sauce.  Chicken, tender potatoes and boiled eggs in a creamy yet mild curry – yum!

This was a hit with both husband and Q….definitely a make again meal.

Kuku Paka3 TB fried onion (or 1 small onion, sauteed)
3 pounds of chicken, cubed or in pieces
1 medium tomato, chopped
1/2 tsp each of garlic, ginger, cumin powder, coriander powder
1/4 tsp turmeric
4 potatoes, cubed
2 1/2 cups of water
2/3 pkg of pure creamed coconut mixed with 450 ml of water (you can use a can of coconut milk instead)
4 boiled eggs

Mix together the onions, chicken, tomatoes and spices and cook for a few minutes on medium heat.  Add the potatoes and water and cook on medium heat until chicken is done.  Add the coconut and continue cooking until the curry has reduced.  Add eggs.

Garnish with parsley or coriander.  Enjoy!

it was a soup kind of day

Being sick and teething has got to be hard for a little boy. Q, my one year old has been having a hard time lately. It is no wonder that he had lost his appetite for a couple days, choosing to only take nibbles of various food rather than eating a proper meal.

The entire household was sick and I figured we needed something to comfort us and warm our bellies….soup!

Q loves things with flavour and I discovered his love of garlic when I made this soup a few months ago. Roasted peppers, onions and garlic combined to make a chunky (or velvety, if you prefer) soup.

Exactly what we needed!


Roasted Red Pepper Soup

1 red pepper, quartered
1 onion, quartered
4 – 5 cloves of garlic
olive oil
salt
pepper
chicken broth
Drizzle the pepper, onion and garlic with oil, salt and pepper. Roast in the oven for approximately 15 minutes at 400 degrees.

Blend the roasted veggies in a blender and place in a pot. Add chicken broth until you get the desired consistency.

I love food.

I love watching food network and enjoy seeing the pros prepare amazing dishes and then creating them at home with my own spin.

I also love going out for food and trying the delicious treats that the city has to offer.
