The best part of summer is all the ice cream. Sure we eat ice cream all year round but it just seems more justified in the heat. When I saw that our chocolate mint that we planted in the garden had grown as much as it did, I knew that it was time to make some ice cream.
It seems that this is the season of no churn ice cream and I had to try it for myself. Basically you whip up 2 cups of heavy cream and fold it into 1 can of condensed milk and freeze. Easy peasy!
To make the ice cream minty, I simmered the cream with a big stem of chocolate mint until the flavour was infused. I let the cream cool in the fridge and then whipped it up in my mixer. Condensed milk is a favourite of mine and I can literally eat it like pudding. Needless to say, the whole can didn’t make it into the ice cream mixture. Once everything was combined, I chopped up ten mint chocolates and added it to the mix. The creamy mix was then poured into a pan and frozen for a few hours.
The resulting dessert was creamy and delicious and was a hit with everyone at our house. It’s a bit dangerous to know this easy method. I’m already planning my next batch!
No Churn Mint Chocolate Ice Cream
2 cups whipping cream
1 can condensed milk
1 stem of mint or chocolate mint
10 chocolate mints, chopped
Simmer the whipping cream with the mint until the flavour is infused into the cream, approximately 15 minutes. Let cool. Whip the cream. In a large bowl, add the condensed milk and gently fold the cream into the milk. Add the chopped chocolate and pour the mixture into a loaf pan or an 8″ x 8″ pan. Let freeze for a few hours or overnight.
When I planted my garden this past Spring, I didn’t really think anything would grow. It was a little experiment that I didn’t have a lot of confidence in. It was exciting when things started to grow, and we have enjoyed watching the garden blossom.
When I checked the garden yesterday, I was thrilled that there were zucchini! I was so excited, I picked one out and decided to do some baking after everyone had gone to sleep. My favourite use of zucchini is a chocolate loaf. I wanted this to be filled with all the things so loaded up this loaf with chocolate chips, pecans and coconut.
This zucchini loaf is made with yogurt and is chocolately and super moist. Definitely one to try!
Chocolate Pecan Coconut Zucchini Loaf
1 1/2 cups flour
1/4 cup cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup pecans
1/2 cup chocolate chips
1/2 cup flaked coconut
1/4 cup olive oil
1/2 cup yogurt
1 egg
3/4 cup sugar
1 tsp vanilla extract
2 cups shredded zucchini
In a large bowl, whisk together the dry ingredients. Add in the nuts, chips and coconut and set aside.
In another bowl, whisk together the wet ingredients along with the egg and sugar. Stir into the zucchini. Pour this mixture into the dry mixture, and stir until combined.
Bake at 350 degrees for 50 minutes.

One of my favourite things from when I was little is enjoying the chocolate magic shell on top of ice cream. You know the one: chocolate syrup that once it hits the cold ice cream becomes a hard shell. I was happy when I rediscovered this a few months ago, adding nuts or sprinkles before the chocolate hardened.
A while back, I saw them make a homemade version of this on tv and was surprised at how easy it was. We had this tonight and it was so good! Be sure you use a chocolate that you like and you will love it!
Chocolate Magic Shell
1/2 cup chocolate, milk or dark
1 TB coconut oil
In a bowl, add your favourite chocolate and the coconut oil. Microwave for 30 seconds, stir and repeat until the chocolate is melted. Let it cool a bit before pouring it on your favourite ice cream.

Valentine’s Day is this weekend, and as fun as it is to go out, sometimes it’s nice to have a quiet meal at home…or, a loud and crazy if you have the kids at home with you.
Nutella Pot De Creme is the perfect dessert to celebrate the day of love. It takes minutes to prepare, so you can spend the day with your loved one, and is super easy. The fancy sounding chocolate pudding is mousse-like in texture and is creamy and chocolatey. The fact that it has Nutella makes me love it even more.
These luscious desserts take a couple hours to set so they can easily be made in advance.You can make this in large bowl or make individual desserts by placing them in glasses. Makes it look a little more fancy. Top it with a dollop of whipped cream and you’ve got yourself something to spoil your Valentine.

Nutella Pot de Creme
1 cup chocolate chips
1/4 cup Nutella
2 egg yolks
1 1/2 cup whipping cream
1 cup whipping cream
1 TB icing sugar
In a blender, combine the chocolate chips, Nutella and egg yolks and blend together. Meanwhile, heat up the whipping cream until bubbles start to form but not boiling. Add the whipping cream slowly through the lid of the blender while blending on low. Once combined, pour into some bowls or glasses and place in the fridge to set, approximately 2-3 hours.
Blend the cream and the sugar until whipped. Place a dollop on top of each pot de creme.

My favourite flavours of the holidays are chocolate and peppermint. Whether it be in the form of a hot drink or a dessert, I’m not picky. One staple during the holidays is whipped shortbread. It’s quick to make and always a hit with family and friends. It was about time the two favourites were combined! I chopped up some mint chocolates and added it to the shortbread batter. The result was a buttery chocolatey minty bite that just melts in your mouth. Perfect for cookie exchanges!
Mint Chocolate Whipped Shortbread
1 cup butter
1/2 cup icing sugar
1 1/2 cups flour
3/4 cup of mint chocolate or peppermint chocolate chips
Cream the butter and icing sugar together. Add the flour and beat for 10 minutes. Stir in the chocolate and make into small balls. Bake at 350 degrees for 12 minutes. Makes around 40 cookies
