Chicken Enchiladas

We make these cheesy chicken enchiladas with leftover rotisserie chicken.  Makes an easy and tasty dinner that everyone loves.

Around here, rotisserie chicken goes a long way. We eat it for one meal but leftovers are used the next day for a different meal and then the bones are used to make stock. Nothing gets wasted. We use the leftovers in sandwiches, pasta, salads and these enchiladas.

The Loft Lounge at Granary Road

The Loft Lounge at Granary Road has extended their summer hours on Friday and Saturday nights. Hubby and I enjoyed dinner there this past weekend and it was great going to their after the market had closed.

The Loft Lounge

Granary Road closes at 5:30 but on Fridays and Saturdays, The Loft Lounge is open until 8. That means, even more of an opportunity to check out their Canadiana fare and enjoy award winning beers, wine and hand-crafted cocktails. It was a different vibe being in the space when the market was closed.

Pumpkin Chocolate Chip Bread

The first time I smelled pumpkin baking was when I was walking the halls of my elementary school a million years ago (or so it seems). The kids in kindergarten had baked some muffins and the delicious smell filtered through the halls. Every time I smell baked pumpkin, it transports me back.

Pumpkin Chocolate Chip Bread

Not much for pumpkin in coffee but pumpkin in cake or muffins, yum! Add in some chocolate? Yes please. I wanted a bread that not only tasted delicious and warm and Fall-like, but one that was moist and this definitely delivers.  The cinnamon and all spice delivers with the warmth and the addition of sour cream makes the bread super moist. No dry crumbs here!
